Jackfruit “Tuna” Vegan Sandwiches from @mymeatlessmeals Ingredients - • 200 g green (young) jackfruit, cut into small chunks • water for boiling • 1/4 tsp salt (I use black salt) • 1/2 tsp black pepper • 2 tsp nori powder (kelp powder) • 1/4 tsp garlic powder • 1/2 tsp onion powder • 1 tbs lemon juice • 4 tbs vegan mayonnaise (or more- if you enjoy living on the edge 😁) Instructions: 1. Boil green jackfruit chunks in water on medium heat until softened. (About 40-50 minutes, depends on the kind of jackfruit you use). 3. Drain cooked jackfruit chunks and transfer to a food processor. Pulse blend for 5-10 seconds just until the texture comes out looking like flakey tuna (as shown in video). 4. Use cheesecloth or a nut bag to extract the excess water from your jackfruit “flakes”. Make sure you squeeze out all the liquid. The dryer your jackfruit gets, the better the texture for your vegan tuna! 5. In a bowl, add your fake tuna, followed by seasonings: salt, pepper, nori powder, garlic powder, onion powder, lemon juice, and vegan mayonnaise. Mix well. Have a little taste and add more salt, lemon juice, vegan mayonnaise, or even vinegar if preferred. 6. Construct your vegan tuna sandwiches. I use bread, greens of choice, and tomato slices. But you could add anything to your sandwiches- as long as they’re cruelty free. 😋 7. Are you following @plantfuture yet? • GNOCCHI - BROCCOLI - ARTICHOKES INGREDIENTS: - - 200g chestnut mushrooms, chopped - 500g gnocchi - 1 tsp garlic, grated - 1 medium onion, finely chopped - 50g artichokes in oil, drained - 50g sun-dried tomato, drained - 150g broccoli, cut into florets - 2 tbsp olive oil - Salt & pepper to taste - - FOR THE SAUCE: - - 50g cashews - 2 tbsp vegan pesto - Juice of half a lemon - Salt & pepper to taste - - METHOD: - 1. Heat the oil in a pan and add the mushrooms. Fry for a good 10 minutes until all the water has evaporated and they begin to fry & take on a golden brown colour. 2. Add the garlic and onions and fry for a further 5 minutes gently so the onions soften. 3. Boil the gnocchi. 4. Add the artichoke & sun-dried tomato to the pan. Stir well. 5. Add the broccoli with a splash of water then cover with a lid and cook for 5 minutes. 6. For the sauce simply blend all the ingredients in a blender with a splash of water. 7. Remove the lid from the pan & add the gnocchi. 8. Add the sauce, remove from the heat and stir well. 9. VEGAN PIZZA!!🍕 INGREDIENTS: - - FOR THE TOMATO SAUCE: - - 1 can chopped tomatoes - 1 sprig fresh oregano or 2 tsp dried - 1 tsp sugar - 1 tbsp olive oil - Salt & pepper to taste - - FOR THE SPINACH: - - 1 tbsp olive oil - 1 garlic clove, sliced - 1/2 red chilli, sliced - 100g baby spinach - Salt & pepper to taste - - FOR THE PIZZA DOUGH: - - 600g all purpose flour - 1 tbsp sugar - 1 tbsp dried active yeast - 1 teaspoon salt - 500ml warm water - - FOR THE PIZZA TOPPINGS: - - 50g artichokes in oil, drained - 50g vegan cheese, grated - Small handful of rocket (arugula) leaves - - METHOD: - 1. For the tomato sauce, simply blend all the ingredients together until smooth. Set aside. 2. For the spinach, heat the oil in a frying pan and gently fry the garlic and chilli for a few seconds, then add the spinach and cook for a couple minutes until it has wilted. Season with salt & pepper then transfer the spinach to a plate covered with a paper towel. 3. For the pizza dough, mix all the ingredients together in a large bowl until a dough forms. Transfer to a floured surface and kneed the dough for 10 minutes. Form the dough into a large ball then leave in the bowl covered with a damp kitchen towel for around 1 -2 hours. 4. To make the pizza take some dough and try to create a pizza shape as best you can (it can be any shape! Lol) …. Make sure the pizza base is covered with lots of flour so you can transfer it easily to the oven. 5. Cover the dough with the tomato sauce and rest of the toppings as shown in the video. 6. Cook for around 10-12 minutes in a hot oven set at 220ºC. It may take slightly longer depending on your oven. 7. Baked Vegan Spring Rolls with Homemade Sweet Chili Sauce from @mymeatlessmeals 🌶 🇹🇭 For Thai Sweet Chili Sauce: • 1/2 cup water • 1/2 cup vinegar • 1/2 cup organic sugar • 1 tsp Himalayan salt (if using table salt, cut the amount by half) • 1 1/2 tbs corn starch + 2 tbs water (making a corn starch slurry) • 1 tbs ketchup • 8 bird's eye chilies, chopped (and deseeded, if you don’t want the sauce to be too spicy) • 6-8 cloves of garlic, chopped 🤤 Making the sauce: 1. Combine all the ingredients (except for the slurry) in a sauce pan and bring to a boil, turn the heat to medium-low and simmer for 7 minutes before adding corn starch slurry. 2. Mix well and transfer the sauce to a container, leave to cool. 🌱 Spring rolls: 👇 • 6-8 vegan spring roll wrappers Or phyllo (filo) pastry • 100 g carrot, thinly sliced into strips • 100 g mange tout (snow pea), cut into thin strips • 300 g cabbage • 2 tbs chopped ginger • 1 tsp Himalayan salt (if using table salt, cut the amount by half) • 1-2 tbs cooking oil of your choice 🎥 Instructions: 1. Sauté all vegetables on medium heat before adding carrot and cabbage, season with salt. (Salt will help squeeze out moisture) 2. Continue to stir fry until the vegetables begin to soften. (5-6 minutes) 3. Check to see if the bottom of the pan has dried up, if so- add black pepper. 4. Transfer the filling to a plate or a bowl where you let it cool completely before begin wrapping. 5. Once the filling is ready, wrap it up as shown in video. I use Sweet Chili Sauce instead of egg wash, for an apparent reason. 6. After that, lightly brush spring rolls with cooking oil and bake at 400for about 15-20 minutes or until golden brown. Serve with Sweet Chili Sauce. 5. Vegan ‘Fishcakes’ from @wearesovegan - Makes 6 ‘fishcakes’: --------------Ingredients--------------- 1 tbsp ground flax seeds 2x 400g tinned chickpeas 1 red onion (finely chopped) 3 garlic cloves (minced) 2 large handfuls of parsley (finely chopped) 4 sheets of nori 1 lemon 1 tsp paprika 1 tbsp dried dill 1/2 tsp salt 1/2 tsp pepper 1/2 tsp mixed herbs For the homemade mayonnaise: 200 g soft silken tofu 2 tsp fresh lemon juice 1 tsp English mustard pinch of salt pinch of pepper 1/4 cup vegetable oil --------------Method--------------- 1. To make the flax egg, add the flax seeds to a small bowl with 2 tbsp of tap water and stir to combine. Set aside while you prepare the other ingredients. 2. Open the two tins of chickpeas, drain and rinse, then transfer to a mixing bowl. Mash with a potato masher until all the chickpeas have broken down. 3. To the mixing bowl, add the finely chopped red onion, minced garlic and finely chopped parsley. Then use scissors to finely cut the nori sheets into small pieces directly into the bowl. Next, add the juice from the one lemon, dill, paprika, salt and pepper, and finally the flax egg from before. 4. Use your hands to combine the ingredients until everything is well mixed together. Then take a handful of the mixture and shape it into a patty. Repeat until all of the mixture has been used up and you’re left with 6 evenly shaped ‘fishcakes’. 5. Heat a little oil in a frying pan on a medium - high heat. Once hot, add in 3 or 4 cakes at a time and fry for 5 minutes on each side or until golden brown. 6. Meanwhile, prepare the homemade mayonnaise by placing the silken tofu, lemon juice, mustard, salt and pepper in a food processor and blend for around 10 seconds. Then add half of the vegetable oil and blend, then add the remaining vegetable oil and blend until the mayonnaise is smooth. Transfer the mayonnaise to serving dish. 7. VEGAN LOADED NACHOS from the awesome @anettvelsberg 🤤🤤🤤 Cheese sauce: 1/2 cup raw cashews, soaked for 1 hour in hot water 3/4 cup (180ml) water 1 cup (235ml) @elmhurst1925 unsweetened almond milk 8 pickled jalapeno slices + 2 tsp liquid 1/4 cup tapioca starch (also called tapioca flour) 1/4 cup nutritional yeast 1 teaspoon turmeric 1 tsp paprika salt (or to taste) 1 packet natural tortilla chips 1 avocado, sliced 1 cup cooked beans (seasoned with salt, chilli and cumin) 1 cup chunky salsa Handful of cherry tomatoes, halved 1/2 red onion, sliced 1 avocado, sliced Handful of fresh cilantro 1/3 cup vegan sour cream Method Preheat oven to 200C. Place all the ingredients for the cheese sauce in a high-speed blender and blend until very smooth. Pour it into a saucepan and cook, stirring frequently, until it gets thick, stretchy and gooey, about 3-5 minutes. Arrange the half chips on a baking tray or cast iron pan, then top with the half the beans, salsa and cheese sauce. Do another layer with the rest of the items. Place in the oven for 10 minutes, until the edges of the chips have browned. Take out of the oven and top with red onion, cherry tomatoes, avocado, sour cream and cilantro. Greek baked beans by @lazycatkitchen: 250 g / 2 cups dry giant / butter beans, soaked overnight 45 ml / 3 tbsp olive oil 2 x 400 g / 14 oz tins of chopped tomatoes 1 tbsp tomato paste 1 small red onion, finely diced 3 cloves garlic, finely diced 1 tsp dried oregano 1 tsp ground cinnamon 2 tsp brown sugar or maple syrup(optional) A good pinch of chilli powder (optional) Approx. 1 generous tsp fine sea salt Few grinds of black pepper Handful of parsley, finely chopped Steps: Discard soaking water and rinse the beans well. Put them into a medium pot and cover with plenty of water. Bring to the boil and then simmer (with a lid mostly covering the pot) for about 45 minutes (make sure you gather the foam that has come to the surface and discard it). At this stage, the beans need to be cooked ‘al dente’ as they will finish off cooking in the oven.In a frying pan, fry the onion until translucent, add in garlic and fry for another minute or two. Decrease the heat to low and add in cinnamon and chilli (if using) to the onion and garlic mixture. Fry for another minute, coating the onion and garlic in the spices. Stir often as spices are dry spices and burn easily. Pre-heat the oven to 180° C / 355° F.Add in tomato paste, diced tomatoes, oregano, salt, sugar (if your tomatoes are a bit too tangy) and pepper. Simmer for about 30 minutes – until tomatoes are starting to thicken. Add in drained beans and mix everything together.Transfer the mixture to an oven safe dish adding about ½ cup of bean cooking water.
