Broccoli soup 🥦
I’m currently suffering from a burnt tongue/mouth bc I kept eating this while it was too hot.
It was super easy to make and to clean!
I started the soup by sautéing the basics: onion, garlic, and celery.
Then I added lots of chopped (about 3-4 crowns) broccoli, chopped Swiss chard, and half a can of chickpeas.
You could add vegetable broth, but I chose to add water until it was 1-2 inches below the broccoli. I added lots of spices (thyme, sage, marjoram, rosemary, and pepper) and a dollop of miso paste for extra flavor! Blend it all up after everything has cooked down.
I topped it with sesame seeds, hemp seeds, and cilantro, although you can leave out the cilantro. I am just obsessed & put it on almost anything.
Serve it with lots of bread 🥖 ✨
