Tonight I stirred and fried my way to what was, in my most utterly humble opinion, a spectacular dinner 🍴
I made fried rice with cauliflower rice, broccoli 🥦, baby sweet corn 🌽, buk choy, coco aminos and sweet chilli sauce 🌶
I also made some crispy satay tofu to go with it, with a marinade made from peanut butter (aka the most pure and wholesome thing in this entire world), sweet chilli sauce, coco aminos, lemon juice 🍋, chilli 🌶 and cayenne pepper! Then I just fried it in a lil bit of coconut oil and voila, dinner served 😏
It took a little bit of time to prep the ingredients and cook all of the components, especially in the confines of my small little kitchenette, but it was definitely worth the end result!
