I am well aware of the fact that I am in no way shape or form a food stylist. I have no idea what I’m doing most of the time. I usually go with the “feels”. My gut is literally all I’ve got: I follow my instincts when it comes to creating and living life in general. I do, however, enjoy presenting my food in an appetizing manner. I have immense respect for people who know exactly how to tell stories with their photos, something I’m amazed by as much as I am pleasantly mystified. This is me, snapping a photo in the moment, as soon as I was done shooting a video. It’s not a story as much as it is a feeling of “I wish you all could share this with me right now”. 😊 The same goes with my videos: I want you to see yourselves in my position, to see yourselves making these recipes at home and share that sense of accomplishment. Lately, I have received so many messages from a lot of you who have tried my recipes and have loved them as much as I do, That brings me such hope, joy, and contentment, knowing that not a single earthling had to suffer for that meal and many others. It is why I created @mymeatlessmeals whether you’re vegan or not- if you’re following me, I appreciate you all the same. Thank you for allowing me to be part of your journey here, even though, at times, I feel, I’m still lacking certain skills (food styling and photography, to name a few)😂. But you all have always appreciated my creativity and my craft, despite the fact that I’m rather different from other accounts and obviously not as polished. So, for that, I thank you from the bottom of my heart. This page is not a business; it is purely my passion, which is why I’m staying true to myself. I have embraced the imperfection that is my individuality, and feeling rather scare to share that with the world. Yet here I am. And I would do it all over again. #Repost @mymeatlessmeals ・・・ Veggie Chow Mein: simple, easy, and tasty (in my opinion, at least!) Hope you all enjoy. ❤️ Veggie (Vegan) Chow Mein 🍜 • 70 g leek • 60 g red onion • 50 g mange tout • 100 g carrot • 100 g capsicum • 80 g shiitake mushrooms • 1 tbs grapeseed oil • 1 tbs chopped garlic • 1 tsp salt • 1 tbs Chinese rice wine (Chaoxing) or white wine if you don't have that- just make sure it's vegan • 2 tbs light soy sauce • 1 tsp rice wine vinegar • 1 tsp white pepper • two servings of vegan noodles (of your choice) blanched (al dente) and tossed in 2 tsp of toasted sesame oil 💚 Instructions: 1. Sauté garlic in canola oil until fragrant before adding leek and red onion. Continue to cook until the vegetables become translucent. 2. Add the rest of the vegetables and sauté until they're nicely toasted, season with salt and chaoxing wine. 3. Once the alcohol has evaporated, add cooked noodles, followed by light soy sauce and vinegar. Toss everything together. 4. When the noodles are evenly seared and looking appetizing, have a final taste (see if you need more salt) if you're contented with the flavours- go ahead and add white pepper before quickly toss everything together again. At this point, you can add scallions (only the green part) for colours and flavours, if you'd like, before turning off the heat. Serve hot. 5. As mentioned in my previous post, I was inspired by a post that mentioned the non vegan version of this, created by @bonappetitmag (check out my previous post). 👉 Vegan Garlic Bread Grilled Cheese 🥪🧀 🌱 (Serves 2-4 sandwiches) • 4 tbs vegan butter (room temperature and soft) • 1 tbs garlic, grated or minced • 2 tbs nutritional yeast • 1 tsp olive oil • 1 tbs flat leaf parsley, finely chopped • bread slices of your choice 🥪 Instructions: 1. Mix together vegan butter, olive oil, nutritional yeast, garlic, and parsley. 2. Make your vegan cheese(recipe below) or use any kind of vegan cheese you prefer. 3. Thinly spread the garlic butter mixture on one side of a slice of bread, make sure it’s evenly distributed. Don’t put too much, you don’t want it to be greasy. 4. In a hot pan, fry or “grill” the bread with the buttered side down. Reduce the heat to medium low. 5. Quickly add vegan cheese on top before placing another slice of bread and spread the butter mixture on top. Make sure the bottom is nicely seared before flipping it over. 6. Continue to cook until golden brown and fragrant. 7. Try not to burn your grilled cheese. 8. Serve hot but be careful not to burn your tongue. 9. Indulge. 🧀 [vegan cheese] • 1/2 cup raw cashew, soaked • 1 cup plant milk • 1 tsp miso paste • 1 tsp Himalayan salt • 1/8 tsp garlic powder • 1/4 cup nutritional yeast • 3 tbs tapioca starch 🌱 1. Blend all ingredients together for a few minutes. 2. In a nonstick pan, simmer the mixture on low heat while stirring vigorously for about 10-15 minutes. 3. Once the mixture turns into a dough-like paste and begins to pull away from the pan, turn off the heat. VEGAN LOADED NACHOS from the awesome @anettvelsberg 🤤🤤🤤 Cheese sauce: 1/2 cup raw cashews, soaked for 1 hour in hot water 3/4 cup (180ml) water 1 cup (235ml) @elmhurst1925 unsweetened almond milk 8 pickled jalapeno slices + 2 tsp liquid 1/4 cup tapioca starch (also called tapioca flour) 1/4 cup nutritional yeast 1 teaspoon turmeric 1 tsp paprika salt (or to taste) 1 packet natural tortilla chips 1 avocado, sliced 1 cup cooked beans (seasoned with salt, chilli and cumin) 1 cup chunky salsa Handful of cherry tomatoes, halved 1/2 red onion, sliced 1 avocado, sliced Handful of fresh cilantro 1/3 cup vegan sour cream Method Preheat oven to 200C. Place all the ingredients for the cheese sauce in a high-speed blender and blend until very smooth. Pour it into a saucepan and cook, stirring frequently, until it gets thick, stretchy and gooey, about 3-5 minutes. Arrange the half chips on a baking tray or cast iron pan, then top with the half the beans, salsa and cheese sauce. Do another layer with the rest of the items. Place in the oven for 10 minutes, until the edges of the chips have browned. Take out of the oven and top with red onion, cherry tomatoes, avocado, sour cream and cilantro. Vegan ‘Fishcakes’ from @wearesovegan - Makes 6 ‘fishcakes’: --------------Ingredients--------------- 1 tbsp ground flax seeds 2x 400g tinned chickpeas 1 red onion (finely chopped) 3 garlic cloves (minced) 2 large handfuls of parsley (finely chopped) 4 sheets of nori 1 lemon 1 tsp paprika 1 tbsp dried dill 1/2 tsp salt 1/2 tsp pepper 1/2 tsp mixed herbs For the homemade mayonnaise: 200 g soft silken tofu 2 tsp fresh lemon juice 1 tsp English mustard pinch of salt pinch of pepper 1/4 cup vegetable oil --------------Method--------------- 1. To make the flax egg, add the flax seeds to a small bowl with 2 tbsp of tap water and stir to combine. Set aside while you prepare the other ingredients. 2. Open the two tins of chickpeas, drain and rinse, then transfer to a mixing bowl. Mash with a potato masher until all the chickpeas have broken down. 3. To the mixing bowl, add the finely chopped red onion, minced garlic and finely chopped parsley. Then use scissors to finely cut the nori sheets into small pieces directly into the bowl. Next, add the juice from the one lemon, dill, paprika, salt and pepper, and finally the flax egg from before. 4. Use your hands to combine the ingredients until everything is well mixed together. Then take a handful of the mixture and shape it into a patty. Repeat until all of the mixture has been used up and you’re left with 6 evenly shaped ‘fishcakes’. 5. Heat a little oil in a frying pan on a medium - high heat. Once hot, add in 3 or 4 cakes at a time and fry for 5 minutes on each side or until golden brown. 6. Meanwhile, prepare the homemade mayonnaise by placing the silken tofu, lemon juice, mustard, salt and pepper in a food processor and blend for around 10 seconds. Then add half of the vegetable oil and blend, then add the remaining vegetable oil and blend until the mayonnaise is smooth. Transfer the mayonnaise to serving dish. 7. Remove the cakes from the heat and serve with the mayonnaise and a salad of your choice. ------------------------------ #veganvideos #veganrecipe

Chewy Chocolate Chip Cookies from @wearesovegan 🍪This recipe makes 10 cookies: --------------Ingredients--------------- 100 g coconut oil 100 g brown sugar 50 g white sugar 75 ml almond milk 50 g applesauce 1 tsp vanilla extract 250 g plain flour 1 tsp baking powder 100 g chocolate chips 50 g dark cocolate --------------Method--------------- 1. Transfer the coconut oil and sugar to a mixing bowl, and stir until fully combined. 2. Add in the almond milk, applesauce and vanilla extract to the mixing bowl, and stir. Then add in the flour and baking powder, and fully combine. 3. Prepare the chocolate chunks by finely chopping the dark chocolate with a knife. Then stir in the chocolate chips and the chocolate chunks into the cookie dough, and mix until evenly distributed. 4. Chill the cookie dough in the refrigerator for 30 minutes. 5. Meanwhile, preheat the oven to 180°C or 350°F and line a large baking tray with baking paper. 6. Remove the cookie dough from the refrigerator and spoon the dough onto the baking tray using an ice cream scoop or a tablespoon, leaving a couple of inches between each spoonful. 7. Bake for 10 - 12 minutes in the preheated oven, turning the tray around halfway through baking if the cookies are browning more on one side than the other. 8. I've been getting messages from new vegans, asking for help with cooking vegan and one of the most asked questions is how to make cheese substitutes. So, I decided to bring this recipe video back. Hope you enjoy it as much as I do. ♥️ Vegan Cheese Sauce 🧀 🌱 • 1 cup raw cashew nuts, soaked till softened • 1 tsp Himalayan salt* if you're using table salt, cut the amount by half (1/2 tsp) • 1 tsp smoked paprika • 1 tsp miso paste • 1 tbs Dijon mustard • 2 tbs lemon juice • 4 tbs tapioca flour • 1/2 cup nutritional yeast • 1.5 cup UNSWEETENED plant milk (I use oat milk) • 2-4 portions of fries/ pasta/ or steamed vegetables- depends on what you'd like to enjoy with this vegan cheese sauce. 🤤 Instructions: 1. Blend all the ingredients together for at least 3 minutes, make sure everything is well combined and smooth. 2. Transfer the mixture to a nonstick saucepan on low heat- stir vigorously until the sauce thickens. The colour will intensify as you continue to simmer. If you'd like the colour to be more yellow- add a pinch of turmeric or some liquid saffron. 3. Once you reach the preferred consistency of your cheese sauce- bathe your fries in all that glorious goodness. 4. Indulge. Or broil for a few minutes if that's what you like. 💘 **If you'd like to substitute cashew nuts- use 1 cup of cooked potatoes (peeled) and 1/2 cup of cooked carrots (also peeled) or use cooked cauliflower if you'd like this to be more healthful. It took a long time for me to come up with my very own recipe for the dipping sauce that is simple to make yet require only basic ingredients which any of you can find anywhere in the world, for the most part anyway 😁 So, here it is- Vegan Chick’n (Seitan) Satay with Homemade Peanut (free) Sauce! Hope you all enjoy. ❤️ I use my own chick’n seitan recipe- check out Peri Peri seitan video on my feed for recipe. 🌱 [Chick’n Satay] • 4 servings of seitan chicken or tofu, cut into small pieces • 1 tsp turmeric powder • 1 tsp ground cumin • 1 tsp ground coriander seeds • 1 cup coconut milk 🎥 1. combine all ingredients and marinate for an hour before transferring the seitan/ tofu onto bamboo skewers. 2. Grill until nicely seared. 🍡🍢 [Dipping Sauce] • 10 dried chilies, soaked overnight • 100 g shallots, peeled • 6 cloves garlic, peeled • 4 coriander roots* (optional, if you couldn’t find it just skip) • 1 tsp ground cumin • 1 tsp ground coriander seeds • 1 can (400 ml) coconut milk • 2 tsp Himalayan salt (1 tsp if using table salt) • 1/4 cup coconut sugar or organic sugar • 2 tbs tamarind paste • 2 tbs tahini • 1 cup toasted almonds, coarsely ground (NOT almond flour or almond meal) 🥜 Instructions: 1. Blend shallots, garlic, soaked chilies, coriander roots, salt, cumin, coriander, and coconut milk together until smooth in a food processor or a blender. 2. Transfer to a pan or a pot, simmer on low heat until fragrant (about 5-7 minutes) 3. Add coconut sugar, tamarind paste and tahini. 4. Mix well- make sure all the sugar has dissolved before adding ground toasted almonds just before serving with your Seitan/ Tofu Satay. 5. This is not the piping hot kind of soup- it is best enjoyed at room temperature or slightly cold. For you avocado lovers out there, I present to you Raw Vegan Avocado Soup 🥑 ♥️ (Serves 2) • 3 ripe avocados • 1.5 cup coconut water (about 355 ml) • 2 cloves garlic • 1/2 tsp black salt * (if you're using table salt, cut the amount by half) • 4 sprigs coriander🇬🇧/ cilantro 🇺🇸 • chili flakes for garnish and an extra kick, if needed. Instructions: 1. Cut each avocado in half. Using a sharp knife, slice through the avocado lengthwise until you can feel the knife hitting the pit. 2. Remove the pits and scoop out the avocado meat before transferring to a blender. 3. Add the rest of the ingredients: coconut water, garlic, salt, and coriander. 4. Blend until smooth. 5. Makes 6: -Ingredients- 1 tbsp ground flax seeds 2x 400g tinned chickpeas 1 red onion (finely chopped) 3 garlic cloves (minced) 2 large handfuls of parsley (finely chopped) 4 sheets of nori 1 lemon 1 tsp paprika 1 tbsp dried dill 1/2 tsp salt 1/2 tsp pepper 1/2 tsp mixed herbs -Method- 1. To make the flax egg, add the flax seeds to a small bowl with 2 tbsp of tap water and stir to combine. Set aside while you prepare the other ingredients. 2. Open the two tins of chickpeas, drain and rinse, then transfer to a mixing bowl. Mash with a potato masher until all the chickpeas have broken down. 3. To the mixing bowl, add the finely chopped red onion, minced garlic and finely chopped parsley. Then use scissors to finely cut the nori sheets into small pieces directly into the bowl. Next, add the juice from the one lemon, dill, paprika, salt and pepper, and finally the flax egg from before. 4. Use your hands to combine the ingredients until everything is well mixed together. Then take a handful of the mixture and shape it into a patty. Repeat until all of the mixture has been used up and you’re left with 6 evenly shaped ‘fishcakes’. 5. Heat a little oil in a frying pan on a medium - high heat. Once hot, add in 3 or 4 cakes at a time and fry for 5 minutes on each side or until golden brown. 6. VEGAN LOADED NACHOS from the awesome @anettvelsberg 🤤🤤🤤 Cheese sauce: 1/2 cup raw cashews, soaked for 1 hour in hot water 3/4 cup (180ml) water 1 cup (235ml) @elmhurst1925 unsweetened almond milk 8 pickled jalapeno slices + 2 tsp liquid 1/4 cup tapioca starch (also called tapioca flour) 1/4 cup nutritional yeast 1 teaspoon turmeric 1 tsp paprika salt (or to taste) 1 packet natural tortilla chips 1 avocado, sliced 1 cup cooked beans (seasoned with salt, chilli and cumin) 1 cup chunky salsa Handful of cherry tomatoes, halved 1/2 red onion, sliced 1 avocado, sliced Handful of fresh cilantro 1/3 cup vegan sour cream Method Preheat oven to 200C. Place all the ingredients for the cheese sauce in a high-speed blender and blend until very smooth. Pour it into a saucepan and cook, stirring frequently, until it gets thick, stretchy and gooey, about 3-5 minutes. Arrange the half chips on a baking tray or cast iron pan, then top with the half the beans, salsa and cheese sauce. Do another layer with the rest of the items. Place in the oven for 10 minutes, until the edges of the chips have browned. Take out of the oven and top with red onion, cherry tomatoes, avocado, sour cream and cilantro. 🎥 @plantfuture ・・・ ASIAN COCONUT NOODLE SOUP! - Ideally I would have used more authentic ingredients but I just threw this together with what I had… super easy & very comforting :) 🤗 🍜 - - INGREDIENTS: - - 150 g rice noodles, dry - 1 tsp grated garlic - 1 tsp grated ginger - 1 tsp red chilli flakes - 4 tbsp soy sauce - 1 tsp sugar - 2 veg stock cubes - 1 can coconut milk - 80g broccoli, cut into florets - 80g green beans, cut in half - 50g carrot, sliced - 1 medium onion, cut into chunks - 50g mushrooms, sliced - 1 tomato, cut into chunks - Juice of 1 lime - - METHOD: - 1. Heat about 1 litre of water in a large pot. Add the veg stock, ginger, garlic, chilli flakes & soy sauce. Bring to the boil and add the veg. 2. Simmer the veg for 3-4 mins. Then add the coconut milk, sugar & noodles. Simmer for a further 3 minutes. 3. Today, I’m serving up something to quench your thirst. 💙 I’ve been making this new and improved recipe for Thai Tea a lot lately- mainly because Thailand heat has been absolutely merciless, even though it is only March. ☀️ That being said, this recipe should help you get through Summer, whenever yours starts. However, if you’re still dealing with cold breeze and snow, you could also enjoy this tea hot. 🎥 Reintroducing... veganized Thai Tea. ☕️ Ingredients: • 1/4-1/2 cup Thai tea mix* (depends on how strong you prefer this to be) If you don’t have that- use black tea. • 2 cups hot water • 2 cups non dairy milk • 1/2 cup soy milk powder • 1/2 cup maple syrup • 1/8 tsp Himalayan salt OR just a pinch of table salt • non dairy whipping cream (optional) *SOY FREE VERSION* - substitute soy milk powder by using cashew milk for the non dairy milk option blended with 1/2 cup of soaked raw cashew nuts. This is for those who would like to avoid consuming soy but are not allergic to nuts or specifically cashew nuts. ☕️ Instructions: 1. Begin by making tea: you can either simmer water with tea mix in a pot for 5-7 minutes or mix tea with hot water. Then, stir and rest in a French Press for the same amount of time. 2. In a pot, with heat off, pour in non dairy milk before adding salt, soy milk powder, and maple syrup. Mix well. 3. Once the soy milk powder has completely dissolved, bring mixture to a boil before simmering on low heat for 10 minutes. After that, from heat. 4. Blend together the vegan milk mixture and tea in a blender for a few minutes. 5. Serve warm or with ice before topping with non dairy whipping cream (optional) 6. Stir everything together prior to drinking. 7. Ingredients: 2 tbsp coconut oil 1 white onion (finely sliced) 4 cloves garlic (finely sliced) 2 inches ginger (grated) 2 red chillies (finely sliced) 2 red peppers (finely sliced) 1 zucchini (courgette) (finely sliced) 2 cups coconut cream (from cans of full fat coconut milk) 1/2 cup red thai paste (always read the label) 1 cup baby sweetcorn (sliced) 1 cup tenderstem broccoli 1 cup mangetout 1/2 tbsp coconut sugar 1/2 tbsp salt 1/2 pint coconut water (left over from the coconut milk cans) 1 cup roasted butternut squash 2 limes (juice) 1 cup cilantro (coriander) leaves Serve with: Fluffy rice (I like basmati but if you prefer something else, that’s your call!) It looks so delicious and quiet simple to make! ・・・ Vegan ‘Fishcakes’ from @wearesovegan - Makes 6 ‘fishcakes’: --------------Ingredients--------------- 1 tbsp ground flax seeds 2x 400g tinned chickpeas 1 red onion (finely chopped) 3 garlic cloves (minced) 2 large handfuls of parsley (finely chopped) 4 sheets of nori 1 lemon 1 tsp paprika 1 tbsp dried dill 1/2 tsp salt 1/2 tsp pepper 1/2 tsp mixed herbs For the homemade mayonnaise: 200 g soft silken tofu 2 tsp fresh lemon juice 1 tsp English mustard pinch of salt pinch of pepper 1/4 cup vegetable oil --------------Method--------------- 1. To make the flax egg, add the flax seeds to a small bowl with 2 tbsp of tap water and stir to combine. Set aside while you prepare the other ingredients. 2. Open the two tins of chickpeas, drain and rinse, then transfer to a mixing bowl. Mash with a potato masher until all the chickpeas have broken down. 3. To the mixing bowl, add the finely chopped red onion, minced garlic and finely chopped parsley. Then use scissors to finely cut the nori sheets into small pieces directly into the bowl. Next, add the juice from the one lemon, dill, paprika, salt and pepper, and finally the flax egg from before. 4. Use your hands to combine the ingredients until everything is well mixed together. Then take a handful of the mixture and shape it into a patty. Repeat until all of the mixture has been used up and you’re left with 6 evenly shaped ‘fishcakes’. 5. Heat a little oil in a frying pan on a medium - high heat. Once hot, add in 3 or 4 cakes at a time and fry for 5 minutes on each side or until golden brown. 6. Meanwhile, prepare the homemade mayonnaise by placing the silken tofu, lemon juice, mustard, salt and pepper in a food processor and blend for around 10 seconds. Then add half of the vegetable oil and blend, then add the remaining vegetable oil and blend until the mayonnaise is smooth. Transfer the mayonnaise to serving dish. 7.
