I combined two of my favorite foods for this: fajitas and risotto. This is a rich & creamy risotto... swap out the milk for water for a lighter meal. This is #lowfodmap and #vegetarian or #vegan. Risotto reheats really well, so it’s perfect for #mealprep. Traditional risotto involves adding stock one ladle at a time and stirring constantly till it’s absorbed, but I took some shortcuts because who has time for that?! A complete, one pot meal with all your #carbs, #veg, and #protein in one bowl!
RECIPE: (4 large very filling servings)
1 tsp olive oil
1 cup (60g) thinly sliced leek leaves (dark green part only)
Pinch chili flakes, optional
Small bunch cilantro, stalks sliced thin & leaves separated
1 tbs cumin
1 tsp paprika
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 green bell pepper, thinly sliced
2 cups unsweetened Ripple (creamier) or almond milk
2-3 cups stock, or water & 2 tsp low fodmap stock powder (I used @fodyfoods powder)
1.5 cups (380g) Arborio rice
0.5 tsp dried oregano
1 tsp dried basil
100g (approx 3/4cup) sharp cheddar cheese (or vegan @)
Salt, pepper to taste
1 tsp garlic oil
Squeeze of lemon juice (approx 2 tbs)
1. Heat olive oil and add leek, chili flakes (if using) & cilantro stalks. Cook 3min until slightly softened.
2. Add cumin & paprika and stir, cook for 30sec. Add peppers and stir again till coated. Cook for 1 min, then add rice. Stir until it’s all coated & cook for 1-3 min until rice begins to turn translucent. Add basil & oregano.
3. Add milk and bring to a boil, then reduce heat to low and simmer. Stir frequently to avoid burning the bottom. As milk gets absorbed, add the water/stock, 1/4-1/2 cup at a time, until rice is cooked. This will take around 25-40min depending how high your heat is. Continue to add water and cook (stirring frequently) until rice is ready, tasting for doneness.
4. Once ready, remove from heat & stir in cheese, garlic oil, lemon juice & salt pepper to taste. Enjoy!
