Weekend around the corner and pizza is all around, right? How about a home made quinoa pizza for a light and easy digestion dinner?
Quinoa is a great protein source for us vegetarians and the best part, it is tridosha - what means that the 3 doshas can eat it without complications. For Vata just not forget always with oil. So, let’s make it and have a great great dinner.
1 pizza for 2-3 people, depends on how hungry you are
For the dough:
1 tea cup of raw quinoa - let it soak for 2 hours at least
1/2 tea cup water
2 tea spoons of olive oil
1 tea spoon turmeric
salt and pepper
Mix all the in the mixer until you get a very creamy dough. Sometimes you will think that is not possible to mix, keep the faith and patience. Pour the dough onto a greased butter paper - believe me, you have to grease it. With a spoon smooth the dough into a rectangular shape. Bake the dough in a pre-heated oven for 20 minutes. Then, turn the dough, spread the tomato sauce and the filling. Here I use baby spinach, black olive pesto from @alnatura and ground macadamias. You can you all source for vegetables according to your dosha for filling - zuccini are great for Pitta, carrots for Vata and Kapha, for example.
For the Tomato sauce:
This maybe be the most different tomato sauce that I have done, you should put the tomatoes in the oven.
2 kaki tomatoes with seed
1 purple onion
1 tea spoon of creamy balsamic vinegar
2 tea spoon of olive oil
1 stuck of black pepper
Rosemary, basil and salt as you like
Cut the tomatoes and the onion, put all the ingredients into a baking tray and bake them for about 20 minutes. Then, mix them up.
