I’m laughing at how crazy simple my meals are this week. I didn’t go overboard on my trip with rich food but my body is craving lots of veggies and fruits and lean protein. 🐟 🥦🍇🍌🍊🥑🍅🥒🍠 Plus, food is your first defense against getting sick so if you feel like you can’t kick a bug then take a look at your diet - chances are you can clean it up even a little and add a few more glasses of water a day to help your body stay hydrated and nourished! 💧 . On my plate: spaghetti squash roasted during meal prep and reheated with EBTBS (@traderjoes) and vegan butter (@miyokos_kitchen). I also steamed multicolored carrots and cooked up tuna burgers and prechopped my peppers so I couldn’t skip them like I normally do! I also added cherry tomatoes that needed to be eaten. #teamnofoodwaste Good healthy food doesn’t have to be fancy or expensive. But it should always be finger lickin good and this definitely was!! 😋 And Thanks @hammock_momma_89 for the spaghetti squash inspiration! 😊

The scale and I have not been on good terms lately. Despite how much I preach to my tribe of gals that the scale is only a number, I have a hard time remembering that myself. Sometimes I have this idea of what number I should see and when I’m not there, I start feeling bad about myself. . . So I’m giving myself (and maybe some of you) a reminder that the scale should not define us. I may be 5 lbs heavier but I have way more muscle definition, my clothes fit great, I have been feeling so strong in my workouts, and I’ve never had more confidence in my life. I will take that over weighing 5 lbs less any day! . . What are some of your non scale victories? 👇🏼

Finally made a decent meal tonight. Marinated & grilled portobella mushrooms & yellow peppers. Also oiled up some onions & grilled them too. . For sides I made quinoa & roasted some little potatoes. . Because the weather last weekend was so gorgeous here, we spent both days doing outdoor work. Type 2 diabetes is entirely preventable, & plenty of research suggests a plant-based diet can help ward off the disease. . Lots of research suggests a diet loaded with fruits & veggies can lower blood pressure. About 1 in 3 American adults suffers from high blood pressure, meaning they're at higher risk for heart disease & stroke –two leading causes of death in the United States. . Harvard researchers tracked the health habits of about 110,000 people for 14 years, & found that the higher intakes of fruits & veggies, the lower their chances of developing cardiovascular disease. Specifically, people who averaged 8+ servings of fruits & veggies a day were 30% less likely to have a heart attack or stroke, compared to those who had less than 1.5 daily servings. . There's plenty of research suggesting vegetarians tend to consume fewer calories, & thus weigh less and have lower body mass indexes than non-vegetarians. Buckwheat is one if the favorite foods in my family. It can be cooked by itself just the buckwheat with some butter. It ovuld be added to other meals as a side. I counted nearly every calorie I ate from 2012-2013. Yes, I lost weight. But I still didn’t find happiness in my physical form. So when my body stopped changing as my metabolism grinded to a halt, I decided that I needed to let go of control and instead find love + confidence in whatever would emerge. • During that time that I let an arbitrary number in my phone control me (1200), I avoided so many group dinners. I isolated myself out of fear of going “off track.” Or if I did go, I’d spend the meal counting bites or chips or eyeballing portions instead of sharing my genuine presence. • So maybe I carry an extra 5-10 pounds from that decision and the ensuing “inconsistency” in my diet. And I’d be lying if I said that I’m 100% ok with that every day. But when I recognize that with the extra flesh comes so many beautiful memories breaking bread with some of my favorite people (while maintaining the vibrancy of my health), I find comfort in my body as home again.

I gave a presentation today on the impact marijuana has on the workplace (my day job is an employment attorney, FYI) and I'm prettyyyy sure I got secondary high simply by the sheer number of times I had to say the word, "marijuana." Thank goodness this BAKED Chicken & Veggie Sheet Pan Dinner came together faster than all the weed puns I came up with for said presentation. . Details for this dope dinner👇🏻 (I can't stop 🤣) - Cut up baby potatoes and place on a baking tray and lightly spray with @chosenfoods avocado spray and sprinkle with pink salt, black pepper, and garlic powder. Bake at 400 degrees for 15 minutes flipping halfway through. Meanwhile, cut up broccoli, sweet onion, and @bilinskisausage chicken sausage. When the timer goes off, add the other ingredients to the tray, spritz with avocado oil, pink salt, and fresh rosemary. Put back in the oven for another 10-12 minutes (flipping once) or until veggies are golden brown. Enjoy 🤤 . P.s., Thank you @maryswholelife for the dinner inspo per usual! 🙌🏻

Hey everyone, Heather here! I had to go to work tonight so had very little time to make dinner. I threw this together in about 25 minutes. I just sauteed a ton of garlic and onions, threw in a bunch of mushrooms and season it with salt and pepper to taste. I roasted the cauliflower at 450 for about 15 minutes and then added it to the rest of the veggies with some Veggie broth until it was soft. Hiding under all those veggies is some delicious rice ramen noodles! I cook the noodles in Veggie broth, drain them, rinse them good, put them back in the pan and coat them with a little coconut aminos. I top this dish with a good dash of hemp seeds and red pepper flakes 👌 The whole fam scarfed it down. I make my lentil chili a little on the soupier side. Probably because I like the texture and chew along with some juiciness. A little chipotle makes this smokey, but my preference is to add some heat and vinegary zing with a good shot of #tabasco in my bowl. . Enjoying some Parsnip Fries from @lexiborr. Loved the recipe and I added some thyme to it. I had it for lunch as a side but this will go great with salads or soups.
