Woke up with a scratchy throat this morning, so took a walk to East Chinatown and grabbed some things to make chicken noodle soup. I'm feeling better now. 😊
Homemade stock flavoured with chicken bones, roasted red onion and garlic, lemongrass, broccoli stems, apples, orange peel, sawtooth herb, bay leaves, fish sauce, rock salt, and toasted spices: coriander seed, fenugreek seed, red Sichuan peppercorn, white peppercorn, black peppercorn, cardamom, and cassia bark. Eating with rutabaga, yellow and orange heirloom carrots, green onions, deep fried chicken skin/fat/cartilage/organs, sliced ginger; and hiding underneath all that is a heap of Chinese buckwheat noodles. Lightly seasoned with homemade hot oil, sesame oil, and sweet soy sauce as condiments.
