To present it : The Soba , speciality from Japan , the Soba is a soup made with Miso , rice or egg pasta , you can find coriander, beef or fish, mushroom and vegetables.
Texture is soft , hot and silky, melty and vegetables bring the crunchy part. It is absolutely delicious! To cut that softness and bring some dynamic in the dish we pair it with a nice minéral wine with freshness as a verdicchio di Matelica,(Italy) , limestone flavour, white flowers and citrus aromatic mix with herbaceous and Umami..🤤 well Some of Chablis could be nice, I prefer to see a savigny les Beaune or an Auxerois it is a magnificence.but everybody’s have his little secret ☺️)
