Hey guys! Physical health wise today has been extremely crappy I feel awful. My whole body hurts and I literally feel like a zombie or just a really really old person (like most days really😂) I’ve been trying to achieve things each day and with my health even though I’ve been ill almost 8 years I’m still trying to see getting out of bed and putting clothes on as real achievements because society try’s to tell us they’re not. Which they totally are! Today that is all I’ve been able to achieve and I’m still proud of myself. Receiving some lovely messages today has really helped to keep my spirits up. #Repost @phdweightloss with @get_repost ・・・ Mini Meat Loaves with Mushroom Gravy Compliments of Friskylemon.com Serving Size: Dependent on allowed protein dinner size For the Meatloaf: - 2 pounds grass-fed ground beef - 2 eggs - ½ small onion, diced (1x/week veggie) - 2 cloves garlic, smashed - pinch of paprika - salt and pepper, to taste For the Mushroom Gravy: - 2 cups portobello mushrooms, sliced - 3 Tbsp coconut oil - 2 cloves garlic, minced - ½ cup coconut milk Instructions: 1. Preheat oven to 400 F and grease 4 mini meatloaf pans (or two regular size pans). 2. Mix together the ground beef, egg, onion, garlic, salt, pepper, and paprika until well combined. 3. Divide the meat between the loaf pans and bake 35 to 40 minutes, until a meat thermometer in the center reads 160 F. 4. While the meat is cooking, heat the coconut oil in a large saucepan. Add the garlic and cook until fragrant and browned, about 2 minutes. 5. Add the mushrooms and cook until soft, about 4 to 5 minutes. Add coconut milk and allow the sauce to reduce over medium heat. Current physique! So here it is in all its glory. - I've decided to take up the Esselstyn Diet starting next week. No I do not have heart disease nor high blood pressure. But it runs in my family and I refuse to be placed on any medication when I'm older. So what is the diet? Well vegan is the first step, no animal products, milk, eggs. And then no oils, no nuts, 100%whole wheat which for me will be buckwheat since I'm gluten free. No juice. No sugar. As little soy as possible. And make sure to read ingredients. Not only will this force me to actually cook, I may begin to feel more energized. I've felt very sluggish for the past few weeks and I've lacked any motivation to do much of anything. I need to change something or I'll wind up in an endless complaint loop. If you ever see that you're headed the wrong direction. Get excited to change course. Nothings wrong with changing things up and getting bored. I love changing things! If you need help I'm here for you :) - I know you'll do great things. You've got this.
