‘Tis the season for root vegetables, and I’m not complaining. Carrots 🥕 are a staple on my because they can be prepared so many different ways, and provide us with so many healthy benefits. Plus, they’re just fun to crunch on for a snack. .
Carrots are rich in beta-carotene (which our bodies convert to Vitamin A), soluble fiber (slows down digestion, keeps us full), Vitamin K, potassium, and antioxidants. The Vitamin A is what we need to promote healthy eyes and vision, so that’s why we’ve always heard we need to eat 🥕🥕 for good eyesight. .
Try roasting them for a cozy side at dinner or a fun addition to a salad. This is the way I fixed them to convert my husband to a carrot fan. 🤓
Heat oven to 400F
Use whole carrots (no baby, they don’t taste as fresh) - I usually cook 10-15 at a time
Wash and peel them
Spread on a baking sheet
Coat with oil, preferably olive or avocado
Sprinkle with salt and pepper
Drizzle with 2 Tbsp honey 🍯 (we also really like spicy honey)
Roast for 28-30 minutes
Use any leftover “juice” in pan to top them .
