Chicken pesto fusilli. Chicken marinated in crushed garlic and home grown green pepper was shallow fried. Cooked fusilli and some pasta water was tossed with the chicken and mixed well. Pesto made with basil, almonds, cashew nuts, garlic, green chillies and oilve oil was poured over the chicken-pasta mixture and served with a sprinkling of red chilli flakes. Blueberry 2 egg omelette with a sprinkling of cinnamon. If you haven’t tried it then do! I cook off the blueberries in coconut oil for a couple of mins before adding the egg. So simple and quick to make. My blood sugar was 4.1mmol before eating, 6g carbs, 1.5units insulin. I always need insulin for eggs, despite being so low in carbs. Full day of eating/what's on my plate (and an exposé of lighting changes outside my apartment): 1️⃣ egg and egg white scramble with mushrooms, peas, and red bell pepper. 2️⃣ FrankenSalad for the #aksaladchallenge - it was supposed to be the Southwest Chicken, but I had to throw it together from my local grocery salad bar rather than prep at home, due to my travel schedule. I will credit @centralmarketpoulsbo for having 90% of what I needed. Added quinoa, because I felt like it. 3️⃣ Tuscan vegetable soup, in a decidedly unseasonal soup bowl. 4️⃣ @iwillnoteatoysters mega famous tahini chocolate chip cookie, a recipe I adore so deeply that she's probably tired of me whipping up batches and tagging her in ALL the photos.

When you’re all about that healthy living but also all about that cheesy, greasy za🍕 • Real talk, I have (super surprisingly) been L O V I N G my new food and fitness routine. I’ve always been incredibly picky when it comes to food and I’ve never enjoyed working out but through making a few small changes here and there I’ve been pushing myself to be healthier and stronger. After just a few weeks of really hard work I’m already seeing and feeling major results👏🏻 • I’ve always seen people post about how much they love and/or crave working out and I thought it was total BS. Joke is on me because I’m only 3+ weeks into @orangetheory and I can honestly say I’ve become one of those crazy workout-loving gym rats • Food and I are still figuring things out. Meal prepping has majorly helped me up my nutrition game. I’m eating way better than I ever have but I still have lots of room to improve. Baby steps I guess • I’m working on a blog post detailing the various lifestyle changes (large and small) that I’ve been making so keep an eye out for that. In the meantime, I’m gonna leave this gorgeous pizza here for us to look at. I’m 4 days away from my cheat day but I already know what I’m gonna be chowing down on🙌🏻

Looking for a Paleo or gluten-free recipe this week? This meat ball recipe is my hands down favorite! ———————————————> Herbed Meatballs 1/4 cup gluten-free oats 1 medium to large egg, lightly beaten 1 1/2 teaspoons dried Italian seasoning 1/2 teaspoon ground cumin, optional 1/4 teaspoon black pepper 2 to 3 garlic cloves minced or 1/4 teaspoon garlic powder 1/4 cup fresh, minced parsley or 1 tablespoon dried parsley 1/2 cup minced onion 1/2 teaspoon sea salt 1 to 1 1/4 pounds grass- fed beef 1. In a medium bowl, combine oats with a quarter cup water. Add next eight ingredients ( egg through salt) and whisk. 2. Crumble meat into a large bowl and top with step one ingredients. Mixed with bare hands pulling mixture apart To evenly distribute seasoning. Do not over-mix. Shape into approximately 24( 1 inch )balls. 3. Bake meatballs on parchment lined baking sheet in preheated 350° oven for 15 to 20 minutes, until done. I could eat pasta for the rest of my life but something just kills me about eating a big old bowl of gluten. I’m obvi not GF, but I feel like with my love of donuts + craft beer (I’m that asshole) my gluten intake is already preeeeetty solid. I’m probably 72% gluten. ANYWAY I found these noodles that are made out of RED LENTILS GUYS (by @explorecuisine) and even Steve (who is the pickiest human on the block) liked them. They are full of protein! They are delicious! They don’t have that weird *am I maybe cardboard?* texture of most GF noods and they tasted like heaven! I finally tried the @traderjoes cauliflower pizza crust! Overall I was really impressed with it! 👍🏻 . || I baked the crust according to the package directions then brushed olive oil + garlic salt over the crust, added tons of mozzarella + parm cheese. Pesto chickpea pasta is the perfect Monday night meal! I love a quick, easy, delish dinner to ease back into the workweek (esp when you are still recovering from a wedding weekend!). Pesto is my all time fave sauce, and takes literally 5 min to make - watch my stories to see the quick recipe. And combined with @eatbanza chickpea wheels + some shaved Parmesan, I couldn't be happier! I love that @eatbanza has so much fiber and protein in it, actually making it a super filling meal. 🍝

My go-to line-up for brekkie smoothies 💣 Always with vanilla #protein powder & coconut milk.. fave combos; > Tropical mix w/ tumeric, or > Green mix + banana. I like my smoothies to have a thin consistency so I make the mix the night before in my nutribullet cup & let the fruit defrost overnight.. then she's ready to go first thing in the morn! 🌞

Threw myself a personal fiesta for getting through another Monday! Taco bowls on deck today! For my Whole 30 friends, sub the beans and corn for tomatoes and an approved salsa and you are good to go 😉 this is made with cauliflower rice so it’s healthy AND delicious! (Semi) Pro tip: I like to add lime juice and cilantro to my rice to give it a little more flavor!
