Collabing with @box8.in and trying out their desi meals on my steel thali 😋 They sent me Chicken tikka chur chur, Chicken Biryani, Peswari kebab rice box, chicken mayo wrap and chocolava cake. 💕 My favourite was the tikka Chur chur which was served with onions and mint chutney. The biryani was flavorful and had good amount of chicken pieces. The Peswari kebab box was decent enough. It had some salad, 2 pieces of chicken kebab & rice that was tossed in veggies. The wrap was mayofull and I loved the flavor of the spices in which the Chicken was cooked. i think it’s clear that i love all things pasta. since i grew up on eating this stuff i really like taking my and others childhood faves and turning them into healthy plant-based meals. i get to make exactly what i love just swapping out the old, not so good for me ingredients, for the new, better for you ingredients. but nothing beats a good ole home cooked meal, especially this 🍝 ONE POT VEGAN PEAS & ROASTED CHEERY TOMATOES FETTUCCINE ALFREDO 🍝. it’s seriously one of my faves. one time i made this dish so much i made us sick of it for a while. i do that sometimes. i get like overly obsessed with a recipe and i make it non stop until it’s played out. who else does that? lol i know i’m not alone 😜// hands-up if you love one pot meals 🙋🏼‍♀️! when i was an exchange student in london, i only owned one pot. can you believe that? it was a deep and wide pot-like-pan that i bought in the market. i did all of my cooking in my sole pot for six months. i can honestly say that during that time i learned a lot about cooking using local, fresh ingredients and how to make a full dinner in one pot. fast forward several (ahem!) years later and i still love a good one pot meal. even though i adore cooking, experimenting, and spending time in the kitchen, i’m usually not so keen on dirtying up a whole bunch of dishes and spending hours on a meal when i come home from school 😰 can you relate?// whenever i’m cooking seasonally with right-off-the-vine produce, i try to let the fresh flavours of the veggies really shine through. there is no need to load up a tomato sauce with overwhelming flavours when the tomatoes you are using are top-notch, you know 🙅🏼‍♀️? and that thinking applies to all kinds of produce. this simple fettuccine alfredo recipe is one of my favorites for letting fresh produce shine. it isn’t the traditional heavy cream alfredo—it’s light, airy, and almost delicate. it is deliciously velvety without being overwhelmingly rich, letting the bright and fresh flavors of the veggies shine through 👍🏻

Sorted for the whole week 😅 ・・・ CHICKEN BURRITO BOWL❤️😋 Serves 4-6 INGREDIENTS  2-3 boneless skinless chicken breasts 3 bell peppers, any color, sliced 1 large red onion, sliced 2 tablespoons olive oil 1 tablespoon taco seasoning Salt and pepper 1 jar salsa 3 cups cooked brown rice, divided 1 can black beans, drained and rinsed 1 can corn 1 cup shredded cheddar cheese 1 lime, sliced into wedges  Fresh cilantro to garnish PREPARATION 1. Preheat oven to 400˚F/200˚C. 2. Line a baking sheet with foil. 3. Place the chicken, peppers, and onions onto the baking sheet and drizzle with oil. 4. Sprinkle the taco seasoning evenly over both sides of the chicken breasts.  5. Salt and pepper the peppers and onions, tossing to coat. 6. Top each chicken breast with a generous pour of salsa. 7. Bake in a preheated oven for 25 minutes. 8. Rest chicken for 10 minutes, before slicing into strips.  9. Add a base of brown rice to 4 food storage containers. Top each with a scoop of black beans, corn, additional salsa, cheddar cheese, cooked peppers and onions, and sliced chicken. Garnish with fresh cilantro and a lime wedge. 10. Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days.  11. Meal-prep FTW! Enjoy!

Red pesto and chargrilled vegetable pasta as my refuel after my first proper coaching session today. We worked on legs and I could barely lift them afterwards! This meal prep requires no clean up! Yup, you read that write, NO CLEAN UP! Put everything on the pan, place in the oven, set your timer for 12 minutes, then do whatever else you need to get done. When your timer goes off you just put the goods in your lunch box, toss the aluminum foil, and maybe do a little dance 💃💃💃! . Ingredients: 4 oz salmon 2 cups kale 6 mushrooms Spices: garlic, salt, pepper . Instructions: Preheat oven to 400. Cover your pan with aluminum foil. Spray it with avocado oil or any other spray. Place all your goods on the pan. Add oil to the veggies. Sprinkle everything with the above spices. Cover with foil. Bake for 12 minutes or until salmon is flaky. . I’ve got a cold currently which my son passed on to me. 🤕 What’s a natural remedy you use? Today I just couldn’t be bothered with food 🥘 so my lovely fiancé made us some dinner. One of his go to meals is beans and pasta. 🍝 Ingredients ✒️ 2 cans of red kidney beans drained 1/2 can chickpeas drained 2 sml tins of tomato paste 1 tsp chilli paste 🌶 1 tbsp olive oil 2 onions fine chopped 3 cloves of garlic minced 1 packet 🍝 Water (measure with the cans from the beans) 👩🏻‍🍳 In a tall pot heat up olive oil over medium heat, add in onions and garlic and sauté until translucent. Add tomato and chilli paste, stir through to coat onions thoroughly. Add drained beans. Stir through thoroughly. Add 2-3 cans of water. Bring to boil and simmer for 20 mins. Add seasoning to taste. Add in your cooked pasta and stir through. T H U R S D A Y ✨ almost to the weekend! this is an easy, “snacky” type of lunch that has been on repeat. sometimes packing a lunch and snack can feel overwhelming if you’re new to it, and thats okay! my tip: add a little sweet, savory, salty and crunchy. this is easy if you have a protein, fruit, veg and some kind of dessert. ——————— i have been buying Forest Fresh brand turkey from @shoprite - its organic so im paying a bit more BUT i know what is in it and its still cheaper than eating out, or getting brands that includes additives & hormones. i also have baby carrots with spicy mustard to dip (watch ingredients if low fodmap) + grapes + white corn chips + hard boiled egg + my sweet potato cookie 🍪 after the turkey roll ups, carrots, grapes + chips I usually feel satisfied so i’ll save the rest for a snack later on. during my low fodmap journey, ive realized i do well with more smaller meals eaten throughout the day rather than larger meals. hope this helps when packing your lunch! lunchbox from @rxbar 💙

Brunch bowl of goodness! Highly recommending this if you haven't already. Overnight oats are easier to digest than normal oats. They don't give me a big bloated tummy like ordinary oats can do! This will fill you and satisfy you for hours. It's almost like a dessert in a bowl. I heated mine today because it's getting cold outside and I wanted something warm in my tummy! It's perfect energy for the day.

・・・ A collard wrap so good it had to be shared twice: Mini Creamy Chickpea Avocado Collard Wraps, made with chickpeas, avocado, tzatizki, and garlic sauerkraut all mashed together. . I don’t have an exact recipe, but I used 2 collard wrap greens and steamed them over boiling water to soften. I also sliced off the thick part of the stem to make them easier to roll. Then mix together about 1/2 cup chickpeas with 1/2 avocado, a scoop of kraut, and 1-2 tablespoons tzatziki!

You guys know I love my frozen cups & this fall version did not disappoint 🍂 . For the base: 2 cups oats 1 tbsp coconut oil 1 tbsp cacao powder 1 tbsp @enjoylifefoods chocolate chips 4 tbsp @lovemysilk vanilla almond milk ✔️ . For the top: 3/4 pint @chimptreats banana nicecream 1/2 cup pumpkin purée Dash of pumpkin pie spice Dash of nutmeg Dash of cinnamon 2 tbsp maple syrup 2-3 drops liquid stevia (optional)🍁 . Instructions: Combine ingredients for the base in a saucepan on low heat until well combined then press into a muffin tray with liners ✨ . Combine ingredients for the top layer in a saucepan on low heat, stir until smooth then pour over the base & pop in the freezer ❄️ . Tonight’s family dinner that will also be lunches for the next few days. First time trying these Chinese 5 spice porks from Woolworths and they turned out fantastic in the air fryer. Served with a fried rice for the guys (made with veggies lurking in the crisper and low GI clever rice) and fried cauliflower/broccoli rice for me. Once I cooked the veggies and egg base I just took some out and added it to my pan of cauli/brocc before adding the rice to the veg base.
