Happy Friday! Actually woke up this morning thinking it was Thursday 🤦🏼‍♀️🤪 But it made my day when I realized the weekend is hours within reach 🙌🏻🎉 . . Lunch’n on this colorful plate of goods today: sautéed carrots, yellow cauliflower, broccoli, snap peas, sunflower seeds and fresh ginger in a bit of coconut oil and pink salt, alongside half an avocado, a soft boiled egg and fresh strawberries. . . Also had a couple zucchini muffins while this was cooking. And yes, I’m such a hypocrite...just yesterday I mentioned not being in the mood to bake and then wham! I wake up this morning to a chilly, quiet house and alll I want to do want to do is bake 😂 So worked on a recipe for zucchini cassava muffins and then made red velvet waffles for me & my babes. Everything turned out well and the boys even liked them. I’ll be testing the recipes again before writing up a post and sharing, so stay tuned 😉 . . Have a great day!

Sunny Friday’s are for Frozen Yogurt Sammy’s! 🍓 . . Made these cuties yesterday as I had left over whole wheat graham crackers from our s’mores kit I made for camping! . . These Frozen Strawberry Yogurt Sammy’s are another perfect summer treat to make! ☀️ Fast and simple, 4 ingredients and a freezer! Oh and YES to no oven! 🙌🏼 Woot Woot! . Lately I’m all about the quick and easy treats! Don’t get me wrong I love making pretty eats 🌸 but with summer I just want yummy food fast! I think it’s the sunshine making me want to spend my days outside verses in the kitchen! Finding that summer balance can be tricky! 😂. . . Cool down with a Frozen Strawberry Yogurt Sammy with the recipe below 👇🏼 . . Ingredients . • 1 cup plain greek yogurt • 1/2 cup low fat whip cream • 1 cup fresh and sliced strawberries • 10 pieces whole wheat low sugar graham crackers . Instructions . • Line 6 inch baking pan with parchment paper • In a medium bowl, mix yogurt, whip cream and strawberries • Line 5 graham crackers on the baking pan. ( I like to pre-break each cracker while placing them into the pan) • Spread strawberry mixture on top of cracker • Place the remaining 5 crackers on top. • Cover with plastic wrap and place in the freezer for at least 4 hours or until harden. • Pull out Sammy 5-7 minutes before eating (that way it’s not so hard when you take your first bite lol) • Store leftovers in the freezer in a ziploc bag. . . #FeelGoodFriday 🍤 It’s official, school is over for summer and I’ve now got 6 weeks of attempting to stay sane, and keep H busy! How I enjoyed my last day of freedom... with a good arms, abs and cardio session at the gym! 🏋🏻‍♀️ . Post-workout lunch was this speedy Mediterranean prawn and vegetable pasta, using soy bean spaghetti to boost the protein and lower the carb content! It’s also #GlutenFree . HOW TO MAKE IT: A pack of king prawns (180g) 1/2 red onion 1 courgette, 3 sun-dried tomatoes (the ones in a jar of oil) A small handful of olives 1tsp of garlic powder 1tsp of oregano, Lots of black pepper A drizzle of the oil from the sun-dried tomato jar. .👩🏻‍🍳 Fry everything together on a medium heat for 10 minutes giving it a good mix around to get everything coated well in the sun-dried tomatoes. Healthy dinners don’t have to be complicated. They don’t have to include a ton of ingredients or take a million hours to make. Contrary to popular belief, the majority of my meals are VERY simple. Usually just throwing things into a bowl and hoping it tastes good. 〰️ I was lucky to have grown up cooking but I know it’s intimidating for a lot of people. Honestly, it’s about finding the flavors and things you like then making a bunch of variations of that. Protein + veggies + carb/something to bulk it up. Easy as that. 〰️ I hardly ever use recipes haha but rather I tend to look at them to get an idea of sorta how to make a dish (basically just what ingredients to use) and then I wing it 🤷‍♀️🤷‍♀️ Last night I whipped up this HELLA good miso baked tofu with sesame soba noodles and sautéed spinach. Easy peasy lemon squeezy :) RECIPE BELOW⬇️ . . . MISO BAKED TOFU: (recipe adapted from @thelastfoodblog ) extra firm tofu, 1 tbs red miso paste, 2 tbs olive oil, 1 clove garlic, 1 tbs toasted sesame oil, 1 tbs honey, half a lemon ––– press tofu, marinate in the miso dressing for 15 min, toss tofu cubes in 1 tbs of cornstarch, bake on 350 for about 30 min turning half way 🙌🏼 . . . Hola! 😊🌸I've been making the most of seasonal fruits this summer & .I realise the days of mango are numbered. This pic is from almost a fortnight ago. Chasing after this little one for an hour followed by breakfast al fresco to celebrate this beautiful Friday morning! We both enjoyed oatmeal with mashed banana, frozen wild blueberries, chia seeds, ground flax, PB and cinnamon (the liquid was a mix of milk and water) - made a big batch for three adult portions and three baby ones!
