Dinner tonight on Day 16 of my #januarywhole30 It was our last evening before the rain rolled in, and surprisingly warm out so we grilled up a bunch of Steak😋 had roasted sweet & purple potatoes with a broccoli, purple cabbage, carrot slaw which I was so glad I prepped ahead cause after work I did not want to cook anything. Because seriously, isn’t EVERY night Taco Night??!! I couldn’t be happier about how these turned out. Homemade #paleo & #lowcarb tortillas (So good, going into regular rotation for sure! Anyone have a tortilla press they like? I think I’m gonna be in the market.) Stuffed these with carnitas, guac, roasted jalapeños, cilantro, onions & dairy free sour cream. 🌮🌮🌮 (sour cream recipe by @livinglovingpaleo & tortilla recipe by @gnomgnom.yum 🧡)

#whole30day16 dinner was a rendition of the unfried hot chicken from @thedefineddish (I used drumsticks instead of thighs. Lunch was whole foods hot bar featuring @nomnompaleo. Breakfast was a veggie scramble on top of oven potatoes. # # Sweet potato Add liner basket and 1 cup water to instant pot. Cook sweet potato for 10 mins on high pressure (mine were small) and let pressure release naturally. Top with ghee, roasted macadamia nut crumble, and green onions (oh my lanta this is my new fave thing) # # Breakfast tips Saute veggies and roast potatoes the night before. I do zucchini, mushrooms, and bell peppers, diced. Then add them to a pan and add 2 eggs and scramble. Day 17, check! ✅ Let’s talk TIGER BLOOD. 🐯💉 This morning I woke up before my alarm went off. I’ve been good about not snacking between meals and today I haven’t felt any hunger pangs at ALL. I actually didn’t even finish my lunch - and here’s an NSV for ya - I didn’t feel the need to clean my plate “just because”. Feeling really good about my physical and mental strength. Here’s the thing though - I wouldn’t say my tiger blood kicked in like a switch. I think it’s been a more gradual transition for me, feeling stronger, more energetic, and more grounded each day. And just because I’m feeling this way, doesn’t mean I feel unstoppable or like a superhero. I still get tired at the end of the day. I’m still painfully sore from a workout I did two days ago. I’m still human! 😂 Tiger blood is different for everyone, but it certainly isn’t a status symbol or a proof that someone is Whole30-ing better than another. I’ve linked an article in my bio about it from the Whole30 website; it’s definitely worth a read. 01.17.18 R4D10M3: I had the best spin class tonight. On Wednesday they turn the lights off, project fun lights, and play the best music. Dinner tonight is the last of the mustard ground pork tenderloin with carrots & onion. I added a side plate of one sliced banana covered in unsweetened coconut flakes. My body adjusted really quickly this round and I’ve definitely hit Tiger Blood early and I’m loving it!

@WHOLE30 EMERGENCY OFFICE MEALS ‼️ You’re at a grocery store and you have 10 minutes to grab food and get back to the office. This grocery store is not Whole Foods. 😂 What do you do? Here’s what I keep in my office already: • Olive Oil • Salt + Pepper • Balsamic vinegar (check your labels) • Raw cashews Here’s what I get at the grocery store: • A small bag of greens • Another bagged veggie that doesn’t require washing (think snap peas, baby carrots, broccoli slaw... and YES snap peas are compliant) • Prosciutto or a can of quality tuna. These are most likely the only ready-to-eat animal protein options at your average grocery store! Check labels, of course! Once you grab your greens and your protein, you already have dressing, seasoning, and an extra bit of nutty crunch to toss right in! I also keep an @rxbar or two in my office as well if I can’t escape for even a few minutes. What are your quick grab and go favorites from an average grocery store? I’d love to know! 💕⬇️

Whole 30 R5D17M3. Is this not the ugliest dinner you’ve ever seen 😂? It was pretty damn delicious though. I had a link of andouille sausage topped with raw sauerkraut and mustard, half of a baked sweet potato topped with ghee and cinnamon, and roasted rainbow carrots. This was real easy to put together after we got back from the gym. Took it relatively easy with a walk and some weights.

Snow day. Kids had the day off because of snow in the forecast and I didn’t want to ask my mother in law to drive in the potential weather, so I took a snow day too. ❄️❄️it did snow for a bit, but we didn’t get the accumulation that had been forecasted. Which made for some bummed kids.... Had last night’s leftovers for breakfast. Lunch was a big salad topped with Publix’s greenwise smoked turkey and #dumpranch and avocado. While my youngest napped I finally got around to hanging some pictures in our bedroom. I snuck out before nap-time was over and planned on 3-4 miles, but ended up with 6 good, solid miles. There was sleet when I started and I ran on some new to me roads, which always makes for a good run. When I got back everyone was up and ready to be outside for a bit, even in the cold temperatures. For dinner I made a chicken and veggie skillet recipe I found on Pinterest, but instead I did it in the #instantpot so I could attend to baths while the food cooked. Chicken, artichoke hearts, mushrooms and red peppers all served over broccoli and cauliflower rice. (Day 16) Weeknight leafy green and beef chili from @fedandfit’s cookbook is one of our favorites! I love the kale in it for texture and added veggies. Swapped out bison for the beef this week, and used the instant pot. We usually have a ton leftover to freeze for an easy lunch/dinner another day! 🙌🏻

⭐️Chicken Tortilla-Less Soup⭐️ [____________________________________________________________] **Modified version of the @therealfoodrds recipe** [____________________________________________________________] Instructions: 2 1/2 lb boneless, skinless chicken breasts 2 tbsp ghee or your favorite Whole30 compliant oil 1 medium onion 1 small red pepper 8 cloves of garlic, minced or 1 tbsp of minced garlic 1 tbsp taco seasoning 1/2 tsp cumin 1 tsp sea salt 3-4 cups Whole30 compliant chicken broth or stock (1) 28 oz can fire roasted crushed tomatoes (may substitute diced tomatoes) Diced avocado, jalapenos and lime wedges for serving (optional) • Directions: 1. In your instapot add ghee or oil and saute the onion, red pepper & garlic until the onion is clear. 2. Add chicken, taco seasoning, cumin, sea salt,chicken broth or stock, and can of fire roasted tomatoes. 3. Hit the Soup button on your instapot and let that yummy goodness cook! 4. This snow day has been full of fun food! Tonight’s dinner was courtesy of @blueapron Ginger Marinated Grass Fed Steaks with radishes, jasmine rice and a boy choy/ mushroom/ shallot/ Chile pepper stir fry. I did substitute the soy sauce and ponzu sauce for #coconutaminos and omitted the sugar called for in the recipe making it a perfect #lifeafterwhole30 meal for me 💁🏼

I've been feeling pretty self-conscious lately because of the bags under my eyes that this auto-immune shit has caused. I'm disappointed that I planned to have several fitness programs published by now, and don't. I constantly feel like I'm failing because I'm not as full of life as I used to be. For the past few months, I've come home and relaxed for a few hours, working from my phone in bed. I miss old me. I miss hustling. I miss going hard. I pray that this experience will become a lesson that will allow me to teach others. 🙏🏼❤️

Real talk, this round has been ridiculously hard for me. My heart’s in it 100%, but my appetite has diminished. I have to force myself to eat at most meals and I’ve skipped more meals than I’d like to admit. I’m definitely not eating enough, my energy levels are low and I’m tired ALL the time. I’m going to use this weekend to regroup, put together a bomb meal plan of delicious foods I love, and remind myself just how far I’ve come. I’m ready for ya Tiger Blood!

I'm going to have to mix it up. . ⚁ coconut curry chicken meatballs with a salad . ⚂ chopped spinach, shredded chicken, currants, sunflower seeds, and a sprinkle of Nooch, all topped off with some #traderjoesvegankalecashewbasilpesto . 🚫📷 Blueberry Rx Bar, my tummy got rumbly after lunch presumably because I couldn't finish my breakfast.

D17M3. 🐷🥔🥒🥕 Pulled pork, baby potatoes, carrots, zucchini. The potatoes were roasted with evoo, s+p, and thyme. The carrots were roasted with evoo, s+p, and parsley. The zucchini was sautéed with Himalayan pink salt ghee from @fourthandheart. The seasonings may be simple but the meal was flavorful and filling! #hungryhappymama

I love when my dad comes to town for work and we get to enjoy dinner together. Tonight I had a shrimp and crab salad and it was perfect. This crazy weather has me craving routine. Hopefully everything is back to normal tomorrow.

Whole30 Day 15! Officially halfway for this girl 💃🏼 . I’ll confess, I have definitely gotten lazy with this Whole30 🙈. I’ve stayed 100% compliant with my food choices but the choices could have been better. I have been snacking and eating lots of mini meals at very strange times, mostly due to the strange sleep schedule I’ve been having. . But the good news?! I’m only halfway done! I’m excited to regroup and tackle the second half of my #Whole30. Bring on that #tigerblood 🐯🐯🐯 . 📸: This mornings breakfast was 2 golden potatoes, 3 fried eggs, 2 strips of bacon, half an avocado, and bulletproof coffee with cinnamon. 😋 . This is currently my favorite breakfast to make. Something I learned very quickly during my first Whole30 is how important it is for me to eat a large breakfast if I want to stay full until lunch.
