Chicken with Kale & Shrooms • Keeping it simple tonight. • Simple meals are sometimes the best meals and tonight’s was no exception. The chicken was pan fried in a stainless steel pan and then thrown into a 375° oven for a little bit. The browned, crispy skin was perfect! After getting my grocery delivery today (which consisted of tons of veggies) I decided to make kale and mushrooms. I just sautéed them in a pan with coconut aminos, sesame oil and rice wine vinegar. This meal was so satisfying! Bbq turkey/ground beef meatloaf, my new favorite salad and baked sweet potatoes. I am a working Mom and the ONLY way I get meals like this on the table is finding little tricks that work for me. This morning before work I mixed and seasoned the ground meats. When I came home this evening all I had to do was pop the meatloaf in the oven and wrap the potatoes in foil. Stammpot // it ain't pretty but boy is it tasty 🤤🤤 _____ Showed how to make this step by step in my stories but I'll include the recipe here as well: Instant Pot Stammpot #whole30approved INGREDIENTS 1 lb bacon, cut into small pieces (more or less depending on your liking) 4 smoked sausage links cut into 1 inch rounds 3 lbs or approx 10 medium potatoes, peeled + diced 1 1/2 - 2 cups canned kale 1/2 - 1 cup water or broth METHOD ◻1. Set Instant Pot to sauté ◻ 2. Cook bacon until halfway done ◻3. Add sausage, cook for 4-5 minutes ◻4. Add potatoes, kale + water/broth ◻5. Set on manual pressure for 7 minutes ◻6. Quick release when cook time is complete ◻7. Mash until desired consistency ◻8. Season with salt + pepper ◻9. Devour 😋 _____ Some ppl like to top this dish with pickles, gravy or beets! My husband likes his with hot sauce + pickle juice 😝 _____ Side note: this makes A TON (for sure like 6 servings, maybe more) but it's perfect for leftovers! 👌

I made this a while ago but it’s still one of my favorites 😍 Veggie loaded turkey burger with sweet potato buns! 🍠Just add your favorite toppings and it’s a perfect twist on your favorite burger! * * * 1. Slice the thick part of a sweet potato, drizzled with avocado oil, and your favorite seasonings. My go to is Himalayan salt, garlic powder and paprika ☺️ 2. Cook at 375 for 30-35 minutes flipping half way through 3. Mix turkey meat, onion, spinach, zucchini and any other veggies you’d like to add. Include an egg if it’s not sticking together. 4. Cook on stove top for about 8-10 minutes on each side or until done. 5. Add your favorite burger toppings and enjoy 🤗

Got my first @iceagemeals package and ate my first #iceagemeals dinner! THIS 👏🏻 WAS 👏🏻 SO 👏🏻 WORTH 👏🏻 IT. We’ve been renovating and won’t have a kitchen for most (if not all) of August. It has been super stressful for me to have to eat out so frequently and I needed a fast meal solution that can help me work towards my goals instead of regressing or staying the same. I looked in to a bunch of #paleo options and Ice Age Meals won out for the price, availability of appetizing options, and the amount of food. Peach crumble in descending order ➡️ After seeing @rooted.in.healing ‘s recipe during her @autoimmunepaleo takeover last week (and picking up an overripe batch of farmer’s market peaches) I knewwww I had to make this recipe. I adapted it a little because I only had cassava flour in the house, no tiger nut flour! And I did one half the normal way (with cinnamon) and one half with lemon zest and basil.... that was a very good idea. Peach + basil belong together. Taking it back to Kindergarten with a show and tell of some of my favorite cookbooks I have here in Salt Lake! * * A major part of my wellness journey has been learning to eat in a way that gives me enough energy to do the things I want to do. 🍉 To be fair, I was raised eating relatively clean, but when I developed mild to moderate allergies to dairy, eggs, cashews, gluten/grains, and pineapple during my freshman year of college, I had to figure out ways I could eat healthy and still get enough nutrition in. If I eat well, my skin stays clear, my energy improves and my happiness soars. Crockpot carnitas tacos 🌮 In a crockpot in the morning, put in your pork roast, chicken broth, green chilies, chili powder, oregano, cumin, pepper, dash of cinnamon, and sea salt. Set crock pot on low for the entire day. Butternut squash chili with jicama and cabbage slaw on top. The slaw added a tangy flavor and a nice crunch to this dish that reminded me of the crackers I used to eat with chili.

Today I tried making my own mayonnaise and then using the same mayonnaise I made my own Dairy Free Chipotle dressing. For Dairy Free Mayo you will need 2 cups of Almond milk 2 cups of Olive oil Three cloves of Garlic 1 tsp try Mustard powder Sea Salt to taste. Add all the ingredients to a blend except the oil and blend for 15 seconds. Then add oil gradually into the blender and let it run while the mix thickens. Taste the Mayonnaise if needed add salt. Once the mayonnaise is ready add 6-8 chipotle peppers in Adobe sauce, dry cilantro, parsley, chili flakes and black pepper. Blend till it becomes a smooth paste. Day 23 of 30 was rough. I remember not really wanting anything. No cravings (which was good) but also no desire to eat another naked burger, grilled chicken, scrambled eggs, or sweet potato. That’s when I came up with this goodness: Enchilada Stuffed Poblano peppers. I stuffed fire roasted poblano peppers with #whole30compliant chorizo, a little cauliflower rice, and other goodness and nestled them in my homemade smoky enchilada sauce. I baked till bubbly and enjoyed with a nice dollop of avocado crema. AIR FRYER DINNER! I received an air fryer as a wedding present and now I understand why people are obsessed. I cut up some potatoes, mixed them with avocado oil, salt, pepper and garlic salt. 20 minutes later, these amazing home fries were ready. Next was the salmon - mix it in the same mixture and 10 minutes later - perfect (crunchy outside) salmon 😍 Do you have an air fryer? What’s your favorite meal to make in it?!

I saw someone somewhere having some type of "bowl" and i just could not get burrito bowls out of my head. So i picked up some flank steak, marinated it, sauteed some caulirice and made steak burrito bowls! Chopped some fresh tomatoes, cilantro, green onion (not pictured) and avocado for toppings. Heres what i used in my marinade-it was delicious! #recipe Honey White vinegar Olive oil Lime juice Salt and pepper Onion powder (or minced onion) Garlic powder (or minced garlic) Chopped cilantro Red pepper flakes (optional for heat) Combine together in ziploc bag and blend with hands until well mixed. Add meat, zip bag and massage with hands until well covered. Marinate for at least 2 hours in the fridge. Make sure your meat is room temp before grilling.

Someone in my coaching group reminded me just how delicious @nomnompaleo’s wonton meatballs truly are so I made them for my meal prep this week. Definitely a top 5 recipe of hers for me. If you haven’t made them, you’re missing out! It’s SO good and SO easy to make. — I’ve been having it over a bed of Asian coleslaw (recipe coming soon) and half an avocado with some toasted black sesame seeds on top. Mmm tonight’s dinner was so 😋. I used the frozen chicken tenderloins I had on hand to make this chicken in marinara with Italian cheese on top on a bed of diced yellow squash straight from my grandpa’s garden! @raoshomemade marinara is the best jarred sauce I’ve ever had. Apparently today is #nationalhotdogday which I just found out was a thing after eating this quick dinner. I had @applegate organic hot dogs wrapped in @pedersonsfarms sugar-free and #whole30approved bacon. On the side were a few squash fritters made with shredded summer squash, a little bit of mozzarella cheese, an egg, and salt and pepper. I’m going on vacation next week, so this meal is part of my fridge clean out. MEDITATION FOR WEIGHT LOSS….. ———————————————— Have you tried it? Mindfulness based behaviors, such as MEDITATION, may be just the tool you need to help with your weight loss/management. Through regular meditation I was able to change my eating habits and stop the unwanted behaviors for good. I know it can work for you too! How? Meditation for weight loss/management works in the 3 ways: 1. AWARENESS: meditation allows you to become more aware of your thoughts and actions around food. It also opens up your eyes to WHAT and HOW you are eating. 2. IDENTIFICATION OF TRIGGERS: the WHY and WHEN. Mindfulness allows you to focus in on your environment and the cues that cause you to over eat and make poor choices. 3. BEHAVIORAL PREVENTION: once you are aware of the unwanted behaviors and triggers, you can start to reshape your mindset and routine to eliminate them for good. Sometimes we fall asleep at the wheel of life, lol…hey, it happens! Meditation allows us to take a step outside of ourselves and see the big picture. If you think about it, most of the eating we do is in fact MIND-LESS, but, by reprogramming your mindset, you can in turn become more MIND-FUL about your decisions and kick bad habits to the curb. Ways to get started: -pick a time you can devote 5 minutes of silence to consistently (no PHONES!) just be still and silent for 5 minutes -start paying attention to your thoughts when you are driving, in the shower, walking, etc -before you get out of bed each morning, take 3 deep breaths and affirm out loud “I will honor my body and mind today” -write down 3 positive truths about your body and health, keep them with you, and affirm them several times a day. 🧘🏼‍♀️
