This meal gave me LIFE tonight. Shrimp Scampi (shrimp sautéed with lots of garlic and scallions in ghee) and zucchini noodles, mashed sweet potato and pineapple, and a salad topped with everything I love - avocado, cherry tomato, artichoke hearts, and black olives. We made steaks with warm lemon salsa verde with a side of sweet potato and broccoli. The salsa verde was spicy and citrusy and had all those bits from the meat, and so simple. These fajitas from @paleomg are always the BEST! Love them as lettuce wraps or just thrown on some lettuce and riced cauliflower - I made these the first week of W30 and I'll make them again and again....and again 🤣😂. I am having a thing for sweet potato this week! Tonight was buffalo chicken (crockpot style) with the last of my dump ranch from Saturday served in a baked sweet potato! We are in the process of selling one home and purchasing another so I triple made this chicken to be able to grab and go when we have to leave for an open house. It packs some heat and takes minimal effort to make. • Buffalo Chicken - crockpot - 2 lbs chicken breasts -2 tbsp ghee -2/3 cup Frank’s Red Hot -sprinkle of cayenne pepper -2 tbsp of apple cider vinegar Cook on low for 6 hours and shred with 2 forks. Serve with whatever veggies you like or in romain hearts for a “wrap”! Not pictured: my red onion and avocado.

Here’s a frittata recipe for the perfect on-tho-go & packable breakfast 👍🏼 _____________________ Ingredients: 9 large @vitalfarms eggs 1 C Tucson kale, torn to pieces 1 C shaved brussel sprouts 1 C arugula 1 C @plainvillepoultry deli turkey, chopped 1 Tbsp of seasonings: @traderjoes onion salt & garlic powder 1 Tbsp @chosenfoods avocado oil 2-3 garlic cloves Pink himalayan salt & pepper _____________________ Cook veggies & deli turkey in avocado oil in a pan until lightly browned, then pour into an oiled pan Mix eggs with seasonings in a separate bowl and pour over veggie & turkey mixture Tilt the pan slightly so the egg covers the entirety of it Bake @ 400 for 30-35 min

No measuring here, but this is what I used! -Chicken sausage - zucchini - red pepper - (green pepper) - cauliflower - red onion - garlic - crushed tomatoes - compliant Cajun seasoning. . Cut up desired quantities and sauté until cooked through. Add your crushed tomatoes and let it soak up for a few minutes. These Instant Pot Chipotle Enchilada Meatballs are one of our new favorites! Recipe is from @wholesomelicious...a friend sent me a link because she thought I might like some of the Instant Pot Recipes, so I picked this one to try. (Thanks @jnltaylorcole!) It was very easy and soooo flavorful, good thing we like spicy, because this was another mouth scorcher! I’ll post how I made it but again, not my recipe! Will definitely check out her other recipes. And while I have not and will not ever do #whole30 (well I guess I should never say never) the best part is, this recipe is #whole30approved! ———————————————— @wholesomelicious Chipotle Enchilada Meatballs (makes 24 Meatballs, dividing into 4 meals): - Blend 1.5 cups @bonafideprovisions organic beef bone broth, 1 cup chopped cilantro, 1 jar @traderjoes Salsa Verde, 3 Chipotle Peppers in adobo sauce, and 2 Tbsp of the adobo sauce. Set aside. - in separate bowl, mix 1.5 lbs organic grass-fed Wagyu ground beef - 1 @vitalfarms pastured egg - 1/2 Cup Almond Flour - 1 tsp chili powder - 1 tsp ground cumin - 1/2 tsp garlic powder - 1/2 tsp pink salt - 1/2 tsp cayenne pepper - roll into 24 Meatballs & place on baking sheet - place under broiler for 5min - with instant Pot in sauté mode, add 1 Tbsp @chosenfoods Avo oil & sauté 1 chopped onion for 3 min - add 3 minced garlic garlic cloves and sauté another minute - add the blended sauce and cook another 3 min - add the Meatballs, reset Instant Pot to manual, cook for 7 min on high pressure! Australia Day is fast approaching! If you are hosting a barbecue to celebrate may I humbly suggest this traditional Lebanese Garlic Dip as the perfect condiment? Perfect with everything from Chicken to Lamb this is sure to be a favorite! (Oh and did I mention it has 4 ingredients and 3 steps? Oh it is Whole30 approved?) Recipe: 👉 3 Heads of Garlic 👉 1 Tablespoon of Salt 👉 Juice of 1 Lemon 👉 2 Cup of Mild Flavored Oil (Eg. Avocado Oil, Pure Olive Oil) To Make: 1. Seperate all of the cloves from the heads of garlic and remove the papery skin and woody bottom on all of the cloves. 2. In a small food processor, combine the garlic, salt and lemon. Run the machine until a thick paste is formed. 3. While the food processor is running, slowly pour the oil into the machine. (It usually takes me 3-4 minutes to incorporate all of the oil.) Once all the oil is incorporated it should be about the consistency of mayo! ‪I made the sunshine ☀️ sauce from the #Whole30 book. It’s pretty good, would have been better if I had the coconut aminos. I threw it over zoodles and the leftover stuffing from bell peppers from yesterday. ‬I realize this is pretty gross looking, but it tastes better than it looks! ‪.‬ ‪.‬ ‪.‬ ‪Super tired after dinner and have a bit of a headache for some reason but I’m blaming that on the dishes I just did! W30, Day 2️⃣3️⃣, which means only one more week to go💪🏻 M1: leftover shredded brussels, chicken/apple @aidellssausage and a hard boiled egg. M2: leftover chorizo chili w/roasted sweet potato and butternut squash cubes. M3: Pizza Pasta over arugula (spaghetti squash cooked in my IP, pizza sauce (read labels!), spicy Italian chicken sausage, onions, green pepper, mushrooms, spinach and banana peppers). Sometimes your breakfast just ain’t instagram material, and you gotta dig around the brown bits in your avocado for the green bits, and you break a yolk in your egg. But let’s face it, this is what my meals are like most of the time. So it’s Day 24 and still none of the #tigerblood I’ve heard so much about. I’m actually sleeping more these past few days and have not worked out; definitely not feeling energetic. After Grace’s morning feed and play, I’ve been going back to sleep when she does because I’m so tired I can barely function. Then I end up getting up at lunchtime. So I must be doing something wrong, idk 🤷🏼‍♀️ anyone else doing #whole30 that’s feeling similar? Breakfast/lunch today was prosciutto, eggs, kale fried in coconut oil and garlic, with some avoooooo. Of course.

I’ll start off by saying: I have not had a beer in over 22 days! 🙌🏻 🍺 With that being said, today was good. No cravings, no crashes. Great workout this morning and I am writing out some structured workouts moving forward. . I had this great plan for dinner, but with the girls’ basketball practice 🏀 7-8 PM, I ran out of time and didn’t get to make what I wanted. 😫 I ended up throwing a few things together and calling it a day.
