Today's #fridaymood calls for Sabudana Khichdi which is paleo and Whole30 friendly. For my friends unfamiliar with Indian cuisine, this is a Savory pudding made with tapioca pearls. We usually enjoy this on religious fasts here, but this is fortunately Paleo too. I am loving the transition from keto, really ! ____ You will need : 3/4 cup Tapioca pearls soaked overnight 2 tbsp Roasted Peanuts crushed 1.5 tbsp Ghee 5-6 Curry leaves Cumin seeds ~ tsp 1 small Potato or sweet potato cubed (optional) Slit Green chillies 3-4 Salt to taste _____ How did I make it : 1️⃣ Heat Ghee in a deep wok, add everything except tapioca pearls. Cumin seeds and curry leaves will splutter. 2️⃣ Spread the tempering before adding the tapioca pearls,so that all the Ghee spreads on the wok. 3️⃣ Add the tapioca pearls and turn everything so that it is well mixed. 4️⃣ Sprinkle about a palm fullof water on the pearls , this is to soften the pearls. If the pearls are soaked properly, You can skip this step. Cook for about 5-10 mins. 5️⃣ Serve it with some Greek yoghurt or have as it is. Recipe makes 2 servings

Here’s that chicken skillet recipe as promised! . INGREDIENTS 2 lb ground chicken 2 Tbsp @chosenfoods avocado oil 1 pkg @traderjoes fire roasted peppers/onions 1 Tbsp each: @traderjoes taco mix, smoked paprika, onion salt, cumin (1/2 Tbsp), chili flakes Pink himalayan salt & pepper . DIRECTIONS Cook meat in avocado oil with 1/2 of the seasonings until almost done Toss in peppers/onions with mixture and add remaining seasonings until done👌🏼

Whole30 Day 4 recap: what. a. long. day. Work, then dropping my car off for an oil change, then tutoring, then an awards dinner to celebrate my amazing friend! I brought my sweet potato fruit bowl for dinner because I knew I wouldnt be able to warm it up and it’s good cold. I had a little salad with olive oil dressing and some veggies but steered totally away from everything else on the super welcoming buffet INCLUDING a WHOLE dessert table. Go Me. I’m glad i had my fruit for some bit of sweetness. I’m proud of myself for sticking to the plan and not straying off course with even a BITE of sugar lol. I’m absolutely exhausted and can’t wait for this week to be over. This shrimp curry is one of my favorites, and is inspired by @true_food_kitchen Have you had their curry!?! Well it’s amazing, and I had to try and recreate it at home. This one is much milder, but still has a little kick. The broth can even be made ahead of time, making dinner time that much easier! This recipe can also be easily adjusted to swap out the protein and or veggies based on your preferences! 🥕 🥦 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Curry Broth . 1 13.5 oz can coconut cream . 1 13.5 oz can coconut milk . 1 17.5 oz can pure coconut water . 2 cups seafood broth . 1 stalk of lemongrass, mashed . 2 tablespoons fresh ginger, chopped . 6 fresh basil leaves . 6 sprigs cilantro . 3 tablespoons red curry paste . 2 tablespoons lime juice . 1 teaspoon curry powder . Pinch of sea salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Stir together broth ingredients and simmer on low heat for 30 minutes to an hour. Strain broth and use right away or you can refrigerate for 3 days or freeze for 1 month. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ . 1 1/2 cups broccoli, chopped . 1 cup cauliflower, chopped . 3 carrots, sliced in 1/2 inch pieces . 1 small onion, sliced . 1 Lb shrimp, peeled and deveined . 1 cup quinoa ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cook quinoa following directions on package. Place broth on a medium low heat. Add carrots and let cook for 5 minutes. Add remaining vegetables and shrimp. Cook until tender and shrimp are pink and cooked through. About 5-7 minutes. Serve over quinoa with fresh cilantro on top.

Salad for people who hate salad. Kimchi fries for people who eat clean. When I started whole30, I tried to eat what everyone else was eating. Lots of salads and grilled meat and roasted veggies and omg it was so boring. Then I started thinking about the foods I liked and what made them unhealthy. I realized that at the core of a lot of them was great flavors from clean ingredients. So I pulled them together and got rid of the junk. Spring mix and arugula, roasted baby potatoes, @aidellssausage apple chicken sausage, cucumber, @wildbrine kimchi, a fried egg, scallions, sesame oil, Korean chili powder, and toasted sesame seeds. The fats from the yolk and sesame oil blend with the acidity of the kimchi to make a perfect dressing. You can add coco aminos too if you like!

Here’s your solution to “I don’t have time to cook” or “I can’t cook!” I always have sausages in the fridge for nights I lack motivation or things don’t go as planned (which is frequently). Paired with a little @traderjoes frozen cauliflower rice and any veggies you can find in the veggie drawers, it’s pretty much a one pan and one dish dinner. Tonight we’ve got onions, peppers, arugula and cilantro. Plus a little avocado and Green Goddess dressing (because that stuff goes well on ANYTHING!). It irks me when people say they don’t have time to cook healthy meals. If your health is a priority, you will make time. And meals like this come in clutch on weeknights so you have no excuse! Chicken breast cooked in salsa verde (cooked mine in the Instant Pot but you could use a crockpot or stove) and throw it on a salad/lettuce wraps or cauliflower rice for a bowl. Voila!

Dinner tonight featured St. Louis style pork spare ribs from our @butcher_box last month topped with @thenewprimal original flavor cooking sauce (pictured is our empty bottle because I used it all 😭), and some green beans and strawbs and 🍍. Whole 30 Turkey Bacon Ranch Poppers (w/ dump ranch). These un-photogenic little bites of Heaven earned a permanent spot in my recipe arsenal. Swipe right for recipe (from my favorite @40aprons). My favorite thing about #whole30? The freedom! I'm a bit of a control freak when it comes to my food, and I've been weighing and counting macros since July 2016. I would stress to hit my goals and beat myself up if I went over. I loved the flexibility but I knew I couldn't keep it up forever. I haven't counted a single macro in a week. I fill my plate with nutritious whole foods and stop when I'm full. I've saved myself so much time around meals and don't feel down over eating a big balanced meal. Will I go back to #iifym someday? Maybe. Here’s some real talk for you: It’s been a dreary day. I’m tired, lethargic, gassy, bloated and ready for the weekend. I’m on Day 1️⃣9️⃣ of #whole30, and this is the most uncomfortable I’ve been in a long time. • These kinds of days deserve comfort food. I took some leftover soup base from a few nights ago, and blended it with hemp seeds for creaminess. Then I topped my soup with ✌🏽 poached eggs, and made an avocado #potatotoast. This perked my mood right up. • Tomorrow is Friday, so it will be better tomorrow. •••••••••••• For those of you just tuning in, I’m doing a #whole30-style elimination diet. In addition to removing the usual suspects, I’m also removing cabbages, kale, apples, broccoli and Brussels sprouts to see if it’ll help with lifelong digestive problems. #bethseliminationdiet

For me this is so much more then just losing weight. It’s another part of this amazing journey I’m on. I made the decision this year, at the beginning of 2018 to change every aspect of my life that made me unhappy or resulted from negativity. I left an old job and found a new more stable job, I removed toxic family members and friends from my life, I committed to a life group where I can deeply connect with my peers, and I began to treat my body like a temple of god. I’ve always been unhappy with my body. In 2015-2016 I had lost a significant amount of weight due to stress, the type of lifestyle I was keeping, and this overwhelming emptiness that I had in my life overtook me. That same emptiness and overwhelming emotions then transformed when my stepmom was diagnosed with cancer. I went from an unhealthy party lifestyle, to a depressive stressed life which I handled with food. Those stupid chocolate chip cookies to be exact. I remember taking the picture in the middle and being so disgusted with myself and not knowing what to do. I hid from cameras, practically lived at the hospital, and had developed some very bad binge eating habits. Fast forward to January 1st 2018. I decided enough was enough and I needed to take back control of every single aspect of my life. My mom entered remission, I had been baptized and accepted Christ as my savior, and gaining control of my life is simply what needed to come next. I’ve been 130 pounds. I’ve been 250 pounds. I am currently sitting at a nice 185 and I am unbelievably okay with that. In four months my life has transformed back to what it was always meant to be like and the reminisce of our struggles are all that are left behind. I have no shame in sharing this story or these pictures because I know now I was beautiful in all of them. I was beautiful when I was so thin my bones popped out. I was beautiful when I was so heavy I didn’t fit into my clothes and I am still beautiful now, when I am so beyond being comfortable in my own skin. Losing weight isn’t about becoming skinny. It’s about setting goals and achieving them, learning to love yourself abundantly, and being comfortable in the skin god gave you. 💪💛🌷

When following my timed nutrition meal plan, one of my meals needs to consist of a fruit, veggie and healthy fat. Sounds like an odd combination but this citrus salad does the trick!!! It is sooooooo easy, it keeps well all week, and I'm hooked!! (👍Plus, it's making sticking to this plan a breeze!) 1 package broccoli 🥗 slaw 2-3 green apples 🍏 shredded or spiralized 1 grapefruit or orange 🍊 (gently squeeze 1/2 of the juice, then peel and cut the fruit into chunks) mix all ingredients well and add 1/4 avocado 🥑 to your portion right before serving. Makes over 7 servings.
