Whole 30 day 18 brekkie: Eggs in a Nest! 🐣 this meal was easy, filling, and delicious. I crisped up frozen hashbrowns in some avocado oil, seasoned them, and then made a little bowl shape with them and cracked two eggs in the middle. My favorite way to get smooth, runny eggs is to add a little bit of water to the pan, cover them, and then take them out right as they start to get white on the top. I dumped my “nest” on a bed of spinach, and topped with salt and pepper and hot sauce. YUM.
