Egg-in-the-hole, autumn style 🍂 I love all kinds of squash and am always trying different ways to cook it. For this delicious breakfast I cut a dumpling squash in half, removed the seeds, drizzled with avocado oil, salt and pepper and roasted it cut side down at 425° for 25 minutes. Flip it over, crack an 🍳 inside each half and put back in the oven for 10-12 minutes or until whites are set. I served with roasted potatoes (also cooked in a 425° oven for 40 min) and arugula. Whole 30 day 18 brekkie: Eggs in a Nest! 🐣 this meal was easy, filling, and delicious. I crisped up frozen hashbrowns in some avocado oil, seasoned them, and then made a little bowl shape with them and cracked two eggs in the middle. My favorite way to get smooth, runny eggs is to add a little bit of water to the pan, cover them, and then take them out right as they start to get white on the top. I dumped my “nest” on a bed of spinach, and topped with salt and pepper and hot sauce. YUM. . . What are some creative ways you eat eggs for breakfast? Something different then the standard scrambled eggs? 🍳

There you have it. 9x13 of delicious fall breakfast for however long it lasts. 🥔🍎🥚🍁This stuff stays good in the fridge all week so its a great Sunday/Monday breakfast bake to make your whole30 week that much easier. (Yes i realize it is Thursday 🙈) This recipe calls for walnuts but I've never been a fan of nuts inside things so I left them out. First dessert in 3️⃣6️⃣ days! Homemade🍦from a local favorite did the trick 👌 Pumpkin for 👩 and strawberry for 👱‍♂️ to round out our dairy introduction! Now back to Whole30 for another 2 days - we will share our experiences with dairy on tomorrow’s post!
