One thing I know from past months is that I really start to miss crunchy things. Yeah, apples, carrots—but they don’t sufficiently satisfy the absence of crunch. While I am aware that the crunch from ‘s Mexican Slaw comes from veg, it’s more satisfying when it’s a big bowl of different textures. Eggs for softness, broccoli slaw and red peppers for crunch, pepitas for some resistance, and some plantain chips crumbled on top. (Note: I’ve just been made aware that plantain chips are no longer w30 approved, but I didn’t know that the other times I’ve done this, and everything worked out fine, so I’m not concerned about it.) Unfortunately, I forgot to buy cilantro, so a pretty major flavor component was missing. Also unfortunately, this is the kind of dinner my husband hates, but I figure there are leftover wings and pizza in the fridge if he doesn’t want it, so 🤷♀️😁.
