Day 13. I heard snow was in the forecast and I immediately got the urge to make soup! This is a whole 30 approved Zuppa Toscana Potato Soup w/ Kale. #whole30day13 and #whole30day14 involved trying to keep warm, and a lot of football watching between meal prep. We made buffalo wings under the broiler using our fave buffalo sauce recipe from @therealfoodrds, Spanish-style Shrimp with Garlic (my favorite tapas) from @nytimes cooking, and a Creamy Greek Chicken “Noodle” Soup from @washingtonpost food. This soup gets its creaminess from an emulsion of egg and lemon and was so simple to make! We omitted the noodles, but I sautéed some potatoes with the veggies to give it a little starch. We also used a compliant chicken broth and a #whole30approved @wholefoods rotisserie chicken to make it even simpler. So good! #whole30 #januarywhole30 #whole30recipes

#whole30day13 today has been a struggle but I’ve stayed on plan. I am tired as I was up a lot with both kids overnight and that meant my cravings for stodgy food/sugar were off the chart. It’s amazing how sleep can affect appetite so much. Breakfast was an eggy scramble. Meal prepped for like half the day check out my stories. Here’s a leftover frittata. Swipe through. I used half of a potato, grated it and added it to a pan with olive oil, next added sautéed bell peppers and onions from this mornings eggwhite omelettes. Then i added cooked bacon that i chopped. I whisked 5 eggs and 3 egg whites together, added those to the pan and turned the heat down low. Let the egg set around the edges and then popped it into my 350 degree oven for another 10-12 minutes until all the eggs cooked through. One of the perks of this whole #whole30 experiment is I've learned a few new tricks to dress up leftovers. I've never cared for leftovers (with a few exceptions), but now we aren't throwing anything away! ( #nsv!) Leftovers twice-baked potatoes --Russet potatoes --Olive oil --Salt --Clarified butter --Leftover veggies, diced --Leftover meats, cubed --Bacon, cooked and crumbled Pierce potato skins with a fork, rub with oil and sprinkle generously with salt. Bake at 425F for 45 minutes. Gently slice a strip from the top of each potato and scoop the insides into a bowl with the clarified butter, leaving a thin shell to hold its shape. Add any leftovers to the potato insides. The amount of leftovers you use will determine how big of a meal you end up with. I added kale, a pork chop, bell pepper, and mushroom. And bacon, because let's face it, that's really the reason I made baked potatoes. Stir, and then repack into the potato shells. Bake for 15-20 minutes, or until completely warm. I topped it with my most recent salsa, which is ANOTHER great way to use up produce! I really liked it, and I had enough leftovers to top with an egg the next morning for a very filling breakfast. #whole30day13 closing up #whole30 weekend 2. So much better than last weekend. Even though I had to cook many more things that I can’t eat. Waffles, oatmeal cookies, turkey grilled cheese.... etc. You’re welcome children. Breakfast: 2 eggs, bacon, spicy sauerkraut, fruit. Lunch: homemade #whole30compliant chicken wangs with compliant ranch dipping. Football was on and these wings were amazing. Dinner: #carnitas on top or roasted sweet potatoes and smothered in guacamole. Dessert: a grapefruit I can definitely tell from last weekend to this weekend the cravings are easier to fight. I did smell a lot of wine this weekend though. I’m not proud. Also not ashamed. (Don’t forget about me wine, I still love you!) And protein burgers with my fave kale salad for dinner! # Dinner- cast iron burgers with steak fries (and kale salad, not featured) Burger 1 1/4 lb ground beef 1 tbsp garlic powder 1 tbsp onion powder 1 tsp paprika Salt and pepper to taste. (I also add a pepper crust on the outside) Sear burgers 1-2 mins per side until browned. Put in heated 400 degree oven for 10 mins until cooked medium well. Serve with mustard, @tessemaes ketchup, and homemade mustard. Fries 4 Yukon gold, cut into wedges 2 tbsp coconut oil 2 tbsp @primalpalate new bae Preheat oven to 425. Line pan with parchment paper and add fries in consecutive rows (you want space between and not touching so they get crispy). Day 13 Dinner: Lunch was out with church friends and I didn’t take a pic (steak, baked potato, a couple shrimp plus steamed broccoli). I was super hungry for dinner but my husband is working tonight and kid 1 & 2 are staying at grandma’s. This was just thrown together Chopped style i.e. I needed to use chicken I had thawed and wanted to eat a potato to boost milk supply. What to do when Whole30 + a night on the town? BYOB! Bring your own Beverages. I thoroughly enjoyed a wonderful meal at a beautiful Italian restaurant I’ve long wanted to go to @sorellinaboston. My server was perfectly happy to allow me to pour my own Komboucha into one of their wine glasses. I partaked in the cheers and did not feel like I was missing out for a second. We started with AMAZING oysters. Then I ordered the Filet Mignon and substituted the whipped potatoes (with butter) for roasted Yukon Golds, in addition to the mushroom ragu. At the Symphony, I simply asked for a cup of hot water and enjoyed my own tea! I generally find most servers and bartenders are happy to see that you have a good experience. Don’t be shy to ask. What’s the worst that could happen? My sister had a funny comment too. For all they know you could be a recovering alcoholic, or pregnant, or just simply don’t prefer to drink- all perfectly valid reasons. Look at social outings during your Whole30 as an opportunity to showcase the habits you’ve been exercising at home and own it!! 👊🏻🍷🥂💃🏻 @melissa_hartwig @whole30
