Whole30 Dinner Day 13: We were looking for a treat for dinner tonight, but nothing that would make us break our #whole30 progress. So for about an hour my husband and I pondered, searched and questioned different recipes. Then I remembered one I saw this week on #whole30recipes. These salt and vinegar chicken wings from @thedefineddish...exactly what we needed! I seriously haven't made something of hers that I didn't like. . #whole30day13 wasn’t anything too special over here. I figured you all are probably tired of leftover pictures of frittata, salads and soup. Our snow storm ended up being a light dusting so we ventured out for a little family time and a trip to Costco for more canned coconut milk #whole30staple. Bentley picked out these incredibles figures today and then thought it was fun to play with it in my hair. I’m ending my night the only way Drew and I have always enjoyed: watching a documentary. I love making #whole30breakfast because it really pushes me to be creative with what I'm eating so I don't just have plain eggs everyday. For example, this sweet potato toast with cashew butter and bananas. It is so good and would've probably cost me $12 at some restaurant here in Denver. . @whole30 Day 13 ✅ It’s freezing outside (literally freezing rain) and we’re staying inside drinking coffee, reading about life after #whole30 and working on my homework for my business coaching program with @alexandramariehogg. Did I think I could be a person that could drink coffee, let alone black? No. Did I ever think I could go 13 STRAIGHT days WITHOUT dairy, sugar, additives, legumes, etc.? Hell no. But I’ve done it. And you know what? I feel amazing. My brain fog has lifted, I feel comfortable in my skin and I can breathe better. And that my friends, is a great Saturday and an even better beginning to 2019. My word for 2018 was STRENGTH. My word for 2019 is FREEDOM 🙌🏼. What’s yours?

#whole30day13 mindset... This idea took me a minute, but it was so helpful once I wrapped my head around it. Breakfast is really just meal 1 of the day. You can eat WHATEV! I still egg it up most mornings, but because I want to. Once I got the idea of "breakfast foods" out of my head, I expanded my meal 1 options to include leftovers, soup, salad, any food. Sunday Nights Belated Dinner Post: Chicken Stir Fry using all the weeks extra veggies! . . @wegmans roasted chicken left overs pan fried in @chosenfoods 🥑oil. In a separate pan I cooked red peppers with a small scoop of ghee and sautéed until slightly browning. I then added that to my main chicken pan. I then added in left over roasted broccoli. I then added in coconut aminos, sesame seed oil, Himalayan salt, black pepper, garlic, and fresh minced ginger. While that was heating, I then in another separate pan cooked up the @traderjoes frozen cauliflower rice using @chosenfoods 🥑oil, added in Himalayan salt and black pepper. Once almost finished I added in a splash of coconut aminos and sesame seed oil. I then pushed the rice to the side of the pan and whipped up two eggs and added to the pan to add eggs to the fried “rice”. Once the rice and chicken were both cooked through I served the chicken stir fry over the fried “rice” and garnished with scallions. #whole30day13 dinner. Pork chops and apples from @paleorunningmomma. Real talk: Today was a tough one, kids. All I want is to eat my feelings with a large pizza and a bottle of red. These pork chops are very tasty, but my pan was too small and it felt like they took forever to cook. I’m tired and cranky and the temptation to dump it in the trash and order pizza was very real. Happy Day 1 Y’all! I did the mindful meditation this morning on the train. And it was exactly what I needed. I’ve got some family drama going on that I can’t control or really help since they won’t let me. So perfect timing! I came home and did the total body love with K & K! I didn’t realize how much I missed workout with them! I ended up having dinner for one with the #tiupups 🐶🐕 since Matt took a stress nap which turned out to be going to bed. So I prepped crockpot fajitas for tomorrow and set up our fancy herb garden we got for Christmas! Day 13 of #whole30 and my energy is back and I’m not feeling bloated anymore! Made Korean Beef rice bowls. beef thanks to @nomnompaleo and my instapot (Korean beef short ribs, Whole30 compliant!). Gave the kids a bowl of rice and let them put in what they wanted. Beef, cabbage, cilantro, pickled onions, and cashews. They loved it! Made some red chard too cause that's what I had. My plate was all that minus rice and plus homemade hot sauce. Our school had spirit night at Chick-Fil-A, so I grabbed a market salad. Left off the blue cheese and delicious looking granola. Used my own dressing at home. Made this awesome #pumpkin custard with a can of pumpkin, ripe bananas, coconut milk, eggs, almond butter, pumpkin spice and pecans. Tasted delicious but definitely needed something to sweeten it up so I added the raisins. What to do when you’re sick with a cold 😷 and on whole 30? Breakfast in bed with a bowl of chia seed pudding! Recipe below 👇 Makes 2 servings (I doubled it to make 4) 1/4 cup chia seeds 1 cup light canned coconut milk 1/2 teaspoon cinnamon 1 vanilla bean pod (optional - they can be tricky to find!) Pinch of sea salt Whisk all ingredients together in a bowl, cover, and let it refrigerate overnight. Wake up in the morning to this creamy deliciousness! Sweet and savory #sweetpotatotoast to kick off day 13 of my #januarywhole30 ! I used @vegolutionaryfoods frozen sweet potato toasts and topped the savory with avocado, hard boiled egg and #everythingbutthebagel seasoning. For the sweet, I went with almond butter, blueberries and cinnamon. It’s nice to be able to pull these out of the freezer and throw them in the toaster, although some were too small to toast without getting stuck.

Day 13: Lunch/Dinner. So I went to work in a giant snow storm yesterday, excepting to be sent home early... nope. AND they ordered AMAZING looking pizza and of course I forgot to pack a lunch 🙄. So I ate a meat stick and a box a raisins and sucked it up. But then I got home and made this amazing tuna salad salad. Cause I was exhausted and I was hungry.

Just a bowl of #zoodles (sorta) and meat sauce. That little bowl next to it is nutritional yeast and while it will never replace our beloved Parmesan cheese, it does fill the void a little. ☺️ :-) How to: I chopped a bunch of zucchini (who needs a spiralizer when you have a knife) into penne sized shapes, sautéed in some olive oil and salt until tender. For the sauce I browned some ground meat and added @raoshomemade marina. This dish came together in no time and only 4 ingredients. @whole30

I couldn’t let the weekend end without sharing this super easy, delicious, Whole30 bowl!! 🥕🥒 NO COOK Spicy Asian Zucchini noodles courtesy of the Real Food Dieticians! We prepped the almond butter sauce per their recipe (which I linked in my profile), and then just sliced up raw zucchini and carrots with our mandoline! The sauce has so much flavor and is so creamy, and the noodles add such a great crunch! I love that it incorporates so many veggies and they don’t have to be cooked!! 👏🏼😂💃🏻 . Definitely one to try!
