12.10.18 So I’ve been completely absent from this account since March, about the time I suffered a back injury. I spent over 3 months in increasing pain, even with intensive PT and Chiropractor appointments, until I was almost unable to walk, sit, or stand. They finally discovered the root of the pain in July and from there I’ve continued to improve with injections and therapy. It’s now December and I still struggle some days but I’m so much better than 6 months ago! On a more positive note... I got married this summer! We had the best day celebrating with our friends and family! We also attended 7 other weddings and it was an amazing summer and fall sharing and celebrating life with our friends. In October we brought home little miss Gretta, our German Shorthaired Pointer puppy. She’s the best lil nugget and I’m so obsessed. We moved to a new city, closer to my husband’s job and I’m currently interviewing and searching for a new position. I’m super excited for my next work opportunity but it’s been amazing spending my days with our pup! 2018 had it’s share of highs and lows, but I’m excited for 2019 bringing a fresh slate and a new start. I’m going to be using this account much more for accountability and connecting with others on their fitness journey. I’m participating in the#JanuaryWhole30 and might extend past the 30 days or until I feel better in control with my food choices. I know that reducing inflammation, and some weight loss, will only improve the rehab of my back and I’m hoping to get to a place where I can exercise again! This weeks @whole30 meal prep just went down. 😁 9 hours in the kitchen 😯 and I still have more to cook but I have no more storage containers or room in my fridge😞 Started round 2 yesterday, only reintroduced homemade popcorn and OMG taste like heaven 😍 I used clarified butter, pink Himalayan salt and kernals 🤗 Pictured meals are: Asian stir fry vegetables, baked kambocha, acorn and buttercup squash, garlic vegetables, sweet potato buffalo chicken casserole, spicy egg muffins, eggs in a nest, Greek chicken and veggies, beefy ratatouille, orange chicken with cauliflower rice. When you stop looking for a temporary fix and focus on the lifestyle and the journey, that is when change happens! We cant be discouraged when we look in the mirror and don't see the results that we want immediately. It takes time to see all the changes we want to see in our bodies. We can go months without noticing anything but we can't let this stop or discourage us from moving forward towards our goals! Yesterday started my journey on my first whole 30 "challenge" ... I think going further I'll call it a plan! I'm not up for dietary challenges so tricking my brain just might help! Day 1 was quite simple which is typical for this meal plan. I ate this yummy bacon, egg, onion, spinach and kale frittata muffins for breakfast ... two more for lunch with a banana ... and then a lemon chicken, kale and spinach salad for dinner. I did get the munchies late in the evening but a snack of approved applesauce and pistachios did he trick. Black coffee has been a struggle. Anybody have some special drink options that curves their "add creamer to taste" habit!???

Day 13✨ (yesterday) was an interesting day, my fam went on a short little winter retreat to the cutest little yurt ever so i didn’t have any service to post, but we left after breakfast so i still got to cook that at home. Breakfast/lunch: eggs, sautéed mushrooms + avocado Dinner: now this was interesting because we only had the fire pit outside to cook with so we decided to go with hot dogs (duh) however it is not very fun to cook them over the fire in the dark when it’s like 10 degrees, but anyways they were pretty good & we also brought a kale salad kit to go with! • • • • • • • • • #healthandfitnessjourney #wellness #homecooking #whole30 #whole30approved #whole30journey

I am so proud of me 🤗😊 30 days of feeding my body home cooked whole foods while eliminating sugar, grains, dairy and processed foods. I've dropped -12.7lbs, my body feels good, no aches, no bloating, no lethargic feeling after eating, sleeping better, breathing better, no knee pain, no pain in my right rotator cuff with more movement, NO SUGAR CRAVINGS FOR CHOCOLATE 😁 although I'm still looking for him 😉 😂🤣 Today I will reintroduce popcorn, homemade of course. " The Final Countdown " 7 days left of WHOLE30 ?! Where'd the time go? 🙈 I'm totally kidding - this has been the longest month of my life! 😅 In just 23 days I've gone from not knowing how to cook to making (cooking or prepping fresh produce) about 90% of the food I've eaten. The first two weeks were a buzz of inspiration and determination. This week however (thanks to shark week) has been a little diff - trying to balance my achy body, cloudy mind, a long "to-do" list and meal planning has not been very fun. No one said this journey would be easy. Eating out has definitely come with its own set of challenges and I'm always carting around my own coconut milk if I want a barista coffee. My 3rd week of WHOLE30 has certainly felt like a juggling act and tonight perfectly ended up being a Saturday night in. I've just made a hot pot of #Whole30 Chilli filled with veggies! It's nutritious and yum and helping to soothe my worries away. I'd love to do a blog post about my #Whole30 journey. I'll include my weekly meal budget, meal prep and recipes, along with how I coped without things like bread, sugar, and a regular coffee ESP when eating out. Day 12✨ So today was my sister’s birthday & before all of this started my mom and i decided we would have one “cheat” day during these 30 days because it wouldn’t be fair to make my sister miss out on bday festivities SO yep I cheated today but I didn’t go all out because I still wanted to stay true to my goals for this experiment ;) plus i probably would have gone insane if I didn’t get a LITTLE bit of my favorite thing (sugar) so this was actually a good thing & we are still on track to finish our 30 days. Breakfast: 1 piece of French toast & strawberries Lunch: turkey wraps with avocado and tomato w hot sauce Dinner: we went out for dinner and I had steak fajitas (I even said no to the tortilla folks) + a few chips/salsa Desert: 1 piece of cake hehe sorry not sorry this just goes to show that strict dieting is not sustainable and is really HARD. I just love coming home from work and whipping up an all in one pan dinner! Citrus chicken stir fry! So colorful and so filling! You could make a cilantro cauliflower rice on the side but seriously guys not needed as this hearty dish was enough to satisfy my hungry hubby! Here’s the recipe! 💚🌱Citrus chicken stir fry 1 lb chicken tenders, cut each piece into 2-3 strips 3 bell peppers, sliced into strips (I used red, yellow & orange to give it and even more citrusy feel) 1 large red onion, cut in-slivers 1 10 Oz package baby Bella mushrooms, quartered 2-3 tblsp avocado oil 1 cup or more of The New Primal Citrus Herb marinade @thenewprimal Salt & pepper to tast 🌱heat oil & stir fry chicken strips for about 5 minutes. This. I resonate with my dear friend Tayler's words so much. Here's why. I am non-celiac gluten-intolerant. I could sit here and list off the spectrum of reactions/symptoms I experience when I eat gluten, but truthfully I'm sick of feeling the need to defend the food on my plate. It's exhausting, but here's what I will tell you: I'm not doing it for attention and I'm not doing it because it's "healthier." I'm doing it because I know what foods leave me feeling like the best version of myself. Am I perfect? Hell no. There are times when I say "to hell with it" and have that slice of pizza, that gyro or that stout because at those moments the aftermath seems worth it. I'm only human... 🤷🏼‍♀️ All of this being said, this time of year can be incredibly frustrating for those of us with dietary restrictions. For anyone reading this, just know that you don't owe anyone anything ESPECIALLY when it comes to the food you choose to put on your plate. Diet is one of the MOST intimate decisions you can make for yourself. Choosing what to nourish your body with is so personal and is no ones business (EXCEPT in the case where it’s harmful, like with eating disorders). . Vegan, Gluten-Intolerant, and Celiac people tend to get a bad rap when it comes to their diet. “You’re doing it for attention”, “are you sure you can’t eat that?”, “why do you have to be so difficult” are all just a few quick judgments people make. . On the other hand, people following restricted diets can be cruel to each other. Many celiacs judge people who are gluten-intolerant for avoiding gluten, or criticize choices celiacs make for themselves related to cc. Vegans can make judgements of non-vegans. Judge each other for how strict or not strict they are. How can we expect respect when we aren’t respecting others? . What we really need on ALL fronts is support. Because no one knows your body better than you do, you are the expert on what makes you feel good and we all need to support that and your journey.

This week’s #FiestaFriday is brought to you by these delicious picadillo tacos! A few posts back I shared the easy picadillo recipe that I grew up eating all the time. Picadillo is such an easy, economical, and delicious meal. I also love the fact that you can make LOTS of things with it: Chiles rellenos, enchiladas, tostadas, and even use it as a yummy breakfast hash! I always make a big batch of picadillo to have on hand for lots of different creations for the week. • • This time my picadillo was turned into tacos topped off with lettuce, queso fresco, and @saucylipsfoods Habanero & Carrot sauce. That sauce has the perfect amount heat and is absolutely delicious! Day30 is here! I finished the whole 30 and I want to share with you my #NSV (non-scale victories) During the program I was not focused on numbers, weight or fat, but other results that you will read below. Tomorrow I will start reintroducing and will track my weight, measurements & fat but this is not important for me anymore, I just do it because it’s great to have results of all the challenges I am doing. . ‼️Physical (outside): Fewer blemishes Glowing skin & no pimples Longer stronger nails fresher breath Flatter stomach Leaner appearance Clothes fitting better (really ! The past few months have been tough. I had a bad cold that has basically snowballed into a whirlwind of binging on comfort foods and holiday indulgences, and I lost all motivation to workout. On top of that, or possibly because of that, I’ve been really struggling with anxiety. I feel restless and moody and overwhelmed, and just so, so uncomfortable. I recognize that my poor food choices and lack of exercise are making me feel worse, but I’ve been cutting myself some slack. This whole anxiety thing is a bitch, and I’m just trying to get a handle on it. But I do think it’s time for some tough love. Today, I started a 10 day whole30 reset leading up to my vacation to Chicago next week. It may be too little too late, but I’m hoping for a little whole30 magic to help me feel like myself again before our trip. Does anyone else suffer from anxiety? Day 8✨ Nothing very exciting to report today y’all- Breakfast: same as yesterday Lunch: turkey lettuce wraps w avocado Dinner: buffalo chicken salad (my fav crockpot recipe —-> ~put 2 or 3 chicken breasts in a crockpot. 2 tbsp of onion powder, and 2 tbsp of garlic powder. 1 small bottle of franks red hot sauce. ~ THAT’S IT. Cook on low for 5 hours, then shred it up. It’s Monday already AND December...what?!! Serious question: where did this year go?! I can’t believe Christmas is around the corner and a new year right behind it! • • To celebrate a new week and new month I decided to make a yummy lunch for the next few days that includes @traderjoes cauli gnocchi, salsa verde and chorizo. So easy, simple, and absolutely delicious! Think of the salsa verde as a Mexican pesto 🙌🏽💃🏽. • • TJ gnocchi slightly thawed in a bowl with warm water. I found this is the best way to ensure I get a good crispy and not gummy gnocchi. The gnocchi only need to rest in that water bath for about 5 minutes, drained, and set aside. Cook some chorizo and drain. I always have chorizo on hand so I only used about 1/2 cup. Use some chorizo fat or add olive oil to skillet and once that’s hot, sear the gnocchi for a few minutes on each side until you get a gold crisp 🤤. Add some salsa verde, (if you don’t know already I ALWAYS have salsa verde on hand), I’d say about 1/4 cup for a package of gnocchi. Let that cook until the salsa is reduced. Serve with the chorizo on top, cilantro, more salsa, and some jalapeños...🌶💃🏽. • • Now I’m going to impatiently wait for lunch time to devour this! Day 7✨ I can’t believe I’ve made it through 1 week of this insanity ! I’m so relieved 😫 today I had some moments of clarity that pushed me through meal planning, shopping, and cooking so it was a great day!! For breakfast I had chia pudding with fruit & yummy coffee w unsweetened coconut milk- this truly made me feel like an adult. Day 6✨ so today was rough- I was feeling unmotivated, lazy, and questioning why the f I was even doing this, buuuut I started doing some more research and found that a ton of people feel the “hangover” effect around the end of the first week of whole 30. Like I was doing pretty good this whole week until today when I felt like I would do anything for a freaking BROWNIE. Ok, I am really loving the Oberweis food selections! When I did Whole 30 last year to help figure out what foods trigger some of my health issues, I discovered I am sensitive to dairy and lactose 😔 So, I was super happy to find out that my breakfast can now consist of dairy free bagels! It's also great for eliminating 13 of the 14 EU listed allergens. The cream cheese kinda counteracts that though 😜 But, hey it's surprising low in sugar!🙌 What foods do you try to limit or eliminate? By the way, did you know that typically the lower the grams of sugar in a dairy product, the less lactose it has?! @bageladies #bageladies #veganfriendly

Day 31!!! I now can see the major difference between a craving and being hungry, I love putting on my clothes and having them fall loose or asking for a size smaller at the shops, and I love the energy I have in the morning when I wake up. While Jason and I have completed our whole 30 month we are continuing to stay on course, or as close to as long as possible. With the holidays coming up, we will have a tipple or two, but our eating will stay clean. Switched it up with an #eggfree breakfast today 👉🏻 mostly because I ran out of eggs 🤣 on my plate: chicken apple sausage minis, broccoli sautéed in avocado oil, and half an avocado. I basically stick to this template every day with eggs/sausage, a sautéed veggie, and some avocado/guac. Day 30, dinner complete. Turkey, mushrooms, red onion asparagus and sweet potato. 💥 loved this round intensely. I truly hope round 2 garners more weight loss. But I’m mostly mostly very happy with how this has gone. Day 5 ✨ you guys this was the best dinner yet! I have no pictures of breakfast or lunch because they were the same oldddd (one thing that sucks about this is I’m getting bored eating the same stuff) 🙄 BUT dinner was SO good and very simple! 1. Cut up peppers & onions 2. Thaw shrimp 3. Sauté veggies on medium/high heat for 5 min w 2 tbsp of olive oil, then push them over to one side and add the shrimp & 1 tsp of each seasoning 4. Cook shrimp for about 3/4 min on each side, until they are completely opaque 5. Mix everything together!
