Day 4 Lunch: Salad Jar
Lunch is on the run today so I thought I'd try this salad in jar thing that all the young hipsters are doing on the interwebs. I think the idea is to put your soggy salad ingredients, including dressings, at the bottom and the greens at the top so they don't get all mushy. When you pore the salad out into a bowl it all falls out in the order that you'd put the ingredients into a bowl anyway (with dressing on top!) Into a clean coffee jar I popped some balsamic vinegar (check label), last nights leftover salsa and guoc, celery, tomato, cucumber and cos lettuce leaves. The tuna isn't ideal for Whole30 as it contains sunflower oil - spring water would have been better, but have to go with what was in the pantry!
I'm a new mum so until today I've been lucky enough to be at home to prepare all my meals for the day. I can imagine it would be so much trickier doing it if I had to go to work!
Even Archie's lunch is Whole30 approved!
