INGREDIENTES ▪️Cogumelos Shiitake frescos ▪️Tomate ▪️Cebola ▪️Presunto de Parma (escolha um de boa qualidade, de preferência, os que são preparados só pernil suíno e sal, sem aditivos) ▪️Queijo Muçarela (não exagere na quantidade, hein!!!) ▪️Cebolinha ou Ciboulette (usei essa, que é mais fininha) ▪️Azeite ▪️Sal ▪️Pimenta do reino . . Passo-a-passo na segunda foto! É só passar para o lado! 👆🏻☺️ . MODO DE PREPARO: 1️⃣ Limpar os cogumelos, tirar os cabinhos e reservá-los e dispor os cogumelos em um tabuleiro 2️⃣ Colocar um fio de azeite e salpicar com uma pitada de sal. Levar ao forno à 180oC por 5-10 minutos. Ele vai soltar um pouco de água e murchar um pouco (como na 1a foto) 3️⃣ Picar o tomate, a cebola e os cabinhos que foram tirados dos cogumelos. Last nights dinner 🌱🥑 good to be back in the kitchen after a week or two of eating out 💫 made some creamy avocado ‘pesto’ sauce for my zucchini noodles 🍝 fried up some mushrooms, red onion & spinach and baked tofu to mix in ✨ Recipe for the creamy avocado ‘pesto’ sauce is: A whole avo 2 tablespoon of tahini (add more of you want I just did it to taste) Half a lemon juiced Pepper & salt to taste 1-2 tablespoons of basil and a hand full of chopped pine nuts! Mash the avo & combine all the other ingredients 🥑 Then add water to make it the consistency you want 🙌🏼

(ALMOST) N O O I L A S I A N P O W E R B O W L Cooking with oil is automatic for me. Maybe it’s because my parents are Italian 🇮🇹. I grew up with delicious homemade food, def a lot of it prepared with EVOO 😉. My mom really is an amazing cook. No lie and no disrespect. She’s lost most of her vision now but still somehow cooks for herself and my dad. For real. ❤️ I have been of the belief some oils were good for me, and fell for the marketing hype regarding coconut oil (an oil that is solid at room temperature with a long shelf life! Research the true effects on your LDL/cholesterol. Yikes.). 🧐 Through the T. Colin Campbell Center for Nutrition Studies (CNS) courses @ecornell_online I’ve come to realize the benefits of a diet and lifestyle comprised of little to no oil (and that IS whole food plant-based). It’s a total mind shift but I think I can get there 🤓. 🥘 On to dinner: This came together quite easily and I was pleasantly surprised. It was after work, I was hot from the heat, I was tired, didn’t know what to make... did I mention tired? #momlife. To the fridge and pantry (& my neighbour’s garden for inspiration)! And here is what we get: - Toasted complex carb rice (bulgur, barley, wheat berries, red rice, oats, quinoa). Toasted in pan with onion and garlic. Added half tsp vegan butter and sautéed until onion cooked down. Fresh parsley added (thanks neighbour) and veg stock. - Kale (thanks again neighbour!) and Baby Bok Choy sautéed with a drizzle of soy sauce in my cast iron. A little water thrown in at the end to bring up soy and cook veg 💦 - Organic firm tofu cubed, water pressed out, dry sautéed in @lecreusetcanada . Splash of soy sauce added and cooked until slightly browned and warm. - Sauce: Tblsp almond butter, 2 tblsp rice vinegar, tsp sesame oil, glug maple syrup. Mix until smooth. Assemble with rice on bottom, then veg, tofu, drizzle sauce, sprinkle organic raw nori flakes, add strips of cut raw nori sheets (I love @rawnori_healthy_living ) plus black sesame seeds on top. 🍚 🌿 Loaded with complex carbohydrates, antioxidants, fibre, iron, vitamins, minerals and lots of protein with no animal products in sight 🌱 💪🏼.

So I had an uh-mazing homemade #avotoast and a cup of almond milk matcha latte yesterday for breakfast, and I took a photo of it to insta story and asked what something like this set would normally costs at hipster cafés because we’re never really a fancy-breakfast-at-a-café type of family. My two boys like roti canai, so you can guess where I have to drag myself to for breakfast most weekends. Anyway, many replied with range between 25 and 35 bucks, whoa!! --- Let me share with you the true cost of my finger-licking breakfast combo; - 1 avocado, current pricing RM3/pc - 2tbsp heap @thejawkisser RM20/bottle that lasts forever - 2 eggs for RM2 at most - 1tsp matcha powder, I bought bulk @nikonekomatcha RM15 that can be probably used for 15 cups - 1C @sogoodau almond milk RM10/carton for about 3cups - items you probably have at home already like toasts, pink salt, chilli flakes and sweetener. These ingredients will make two foolproof avocado toasts and a milky moustache-frothy matcha latte. Frugal tips: one avo can even make four toasts and you can perfectly use cow’s milk you lucky non lactose intolerant folks. --- Total ingredients: RM12, give and take Knowing exactly what you put into your mouth: Priceless

Can we do #tunathursday instead just for today because I got this sampling, tuna muffin, from @moomev for too long 😆 . Cocoa Pao-Pao 🍞🍫 stuffed tuna 🐟 @kanomkongmev . New release ones but not yet official. She sent it to me to try if it works with the tuna or not. For me, it isn't as good as the chicken floss ones, might because its texture which is chunky and plain because it's real tuna with nothing added! One problem, it may get rotten easily from moisture of tuna that makes the cake soggy.
