Another version of my pumpkin carrot oatmeal, this time I added a bit of mango ------------📜------------ 150g pumpkin 1 carrot (80g) -> dice both, cover halfway with water in a pot, close the lid and cook on low heat for 20 min. Then blend everything and while constantly stirring add other ingredients 60g mango 40g oats 15g chia 10g vanilla protein powder 1 tsp maca 1 tsp psyllium husks 1 tsp oat fiber If necessary, add more water 💦 until the desired consistency is reached Toppings: Raspberries Blueberries Mango Pecan nuts

Especially when stores (especially Trader Joe’s) do such an incredible job marketing their food to be “healthy”. A lot of it is, but the reality is that even more of it isn’t. We as consumers are super fortunate to have so much access to information today that we can be our own investigators when it comes to our food. Pick it up, turn it around, and read the ingredients. Soup in September....say whaaaat ‼️🤷🏻‍♀️❓ . . So I’m swapping summer salads with autumnal soups, and there’s nothing better, or easier than homemade Carrot + Squash Soup 🥣 . For my soup I use, 1 butternut squash, diced, 6 carrots, chopped, 1 large onion, finely diced, a small piece of ginger, grated, 3 cloves of garlic, sliced, about 1L of vegetable stock, Chinese 5 spice, Nutmeg and salt + pepper to taste! . Use traditional soup methodology for cooking and add the Chinese 5 spice and nutmeg as you blend, to taste! . (For those non vegans *smh, you can add a drizzle of double cream as you blend...🤤😩!!) . Healthy cauliflower crust pizza! Today’s lunch was soooo good. I knew I was going to want to make one of these pizzas this week so when I meal prepped over the weekend I roasted a few toppings so I’d just have to throw everything on top and warm it up in the oven. . I used @califlourfoods cauliflower pizza crust, tomato sauce, red and orange peppers, broccoli, red onion, chicken, and topped with @bitchinsauce pesto and some dried basil and oregano.

Spicy Tilapia with Spinach Ingredients: 10 oz raw tilapia (should yield one 7-oz cooked serving) 3 cups (1 small bunch) fresh spinach 1 cup (2 small 2-2/5”) canned tomatoes, diced (to reduce sodium content, use “no salt” canned tomatoes or fresh tomatoes) 2 tsp olive oil or canola oil ¾ tsp paprika ¼ tsp red pepper flakes ¼ tsp garlic powder ½ tsp hot sauce Directions: Preheat oven to 350° F. Combine paprika, red pepper flakes, garlic powder, and hot sauce. Brush olive oil over fish. Coat fish with seasoning mixture. Lay tilapia flat in a baking pan. Drain juice from canned tomatoes; place tomatoes on top of tilapia. Tear spinach into bite-sized pieces; place around tilapia in pan. Carolina Greens with Baked Tilapia 3 Servings Ingredients: 25-27 oz raw tilapia (should yield three 7-oz cooked servings) 6 cups (1 small-medium bunch) fresh collard greens, chopped 3 cups (1 small bunch) fresh kale, chopped 1-½ cups (2 medium 2-3/5”) fresh tomatoes, diced 1 cup (1-2 medium 2-3/5”) plum tomatoes, seeded and chopped ½ cup water 3 Tbsp white onion, chopped 3 Tbsp Tabasco® Sauce 2 Tbsp olive oil 1 tsp ground cumin ¼ tsp freshly ground black pepper 1 clove garlic, minced Dash of salt (optional) Directions: Preheat oven to 350° F. Brush olive oil over tilapia and place in a glass pan. If desired, add a dash of salt and ¼ tsp black pepper. Add ½ cup water to bottom of pan to help keep tilapia moist while baking. Bake 25 minutes. While tilapia is baking, dice tomatoes, onions, and garlic. Wash collard greens and kale; remove large stems and any discolored leaves. Chop collard greens and kale by stacking leaves and slicing them cross-wise into small squares (about the size of a postage stamp). Combine tomatoes, onions, cumin, garlic, and Tabasco® Sauce in a saucepan; cover and cook 7 minutes on medium heat. Add greens and stir 1 minute. Cover and allow to gently simmer, stirring frequently, 15 minutes or until greens are tender. Remove tilapia from oven. Ginger Tzatziki Chicken Wraps 🙌 (Modified from Shared Food's Recipe) For the Chicken Marinade: 2 lbs Chicken Breasts, diced 1/4 C Soy Sauce 2 t Ginger Powder 4 t Olive Oil 1/4 t Pepper For the Tzatziki Sauce: 1/4 C Cucmbers, finely diced 1 Clove Garlic, minced 1 t Dill, dried 1/4 t Salt 1/4 t Pepper ½ C Plain Greek Yogurt, low-fat For the Wraps: 7 oz Whole Romaine Lettuce Leaves 7 oz Cucumbers, sliced Directions: Mix marinade ingredients in a bowl or zip lock bag and allow chicken to marinate for at least 30 minutes. Mix Tzatziki Sauce ingredients in a bowl and allow flavors to marry together for an hour or two. Assemble chicken on kabob sticks and grill or bake/cook. Place several cucumber slices in lettuce boats followed by chicken and top with Tzatziki sauce.
