BEST THAÏ SOUP EVER!!! I am a total soup nutter and could eat it for all 3 meals. Here is one of my fav💕🍜
1 tablespoon coconut oil
1 1/2 pounds raw shrimps
Salt to taste
4 garlic cloves, minced
1 broccoli, cut in florets
2 tablespoons red curry paste
1 tablespoon freshly grated ginger
6 cups low sodium chicken broth
1 (13.5-ounce) can coconut milk
2 c. soja sprouts
1 lemon (zest it and squeeze for juice)
4 green onions, thinly sliced
1/2 cup chopped fresh cilantro leaves
1/4 cup chopped fresh basil leaves
red hot peppers chopped optional for some heat
Heat the oil in a large stockpot or Dutch oven over medium heat. Add the garlic, ginger and red curry paste and cook until fragrant for 1-2 minutes.
Stir in chicken broth and coconut milk, scraping any browned bits from the bottom of the pot.
Bring to a boil; reduce heat and cook, stirring occasionally, until reduced, about 10 minutes. Add broccoli for the last 5 minutes and shrimp for the last 3 minutes.
Remove from heat; stir in green onions, cilantro, basil and lemon juice and zests from 1/2 the lemon; season with salt to taste and top with sprouts.
