Chocolate roll up. Vegan and gluten free.
The dough ingredients are ¾ cups buttermilk (add 1 T apple cider vinegar to plant milk), ¼ cup vegan butter, 3 ¼ cups all-purpose flour, 1 package yeast, ¼ cup sugar, ½ teaspoon salt, ¼ cup plus 2 tablespoons water.
Heat up buttermilk until it simmers. Take off heat and butter. Let sit. Now mix 2 1/4 cups flour, salt, yeast, sugar. Add water to milk mixture then add to flour mixture. Now with the reminder flour add slowly to the dough. Knead 5 minutes. Let sit an hour in warm place with a warm wet towel over it.
Then roll out the dough. Melt down 1 cup chocolate chips, 4 tablespoons of butter, 4 tablespoons cashew butter, 4 tablespoons milk. Add chocolate mixture to top of the rolled out dough. Spread evenly. Roll dough into a log cut into pieces and place in greased muffin tins.
