LUNCH Salmon • Bok Choy • Broccolini • @slendier Konjac Noodles @ @campbells Fish Stock • Chilli • Coriander • Fried Shallots • @carwariinternational Japanese Seasoning . . . The perfect winter warmer, but this work in the warmer months too. It was so quick to throw together. I infused the fish stock with ginger, sesame oil and coconut aminos. . . Rinsed and had the Konjac Noodles soaking in hot water while I cooked the salmon. . . I placed the veggies into the stock to cook them slightly, removed and then seared the bock choy in the same pan with the salmon to get that great color & flavor. . . Drain and place the noodles in a bowl, add the veggies around, pop the salmon on top of the noodles and pour in the stock. . . I’m really noticing that my body can handle more foods again. I didn’t react to the cheese last night, eggs are fine and THANK GOD chilli’s back on the menu! . . . Can we all please acknowledge my efforts when I cut out chilli for months!! It’s so good to have it back. But I guess all that restriction was worth it because I’ve healed so quickly. . . . The trick for me now is to not live in fear of certain foods and start reintroducing. I’m looking for foods that give me energy. The ones that don’t get benched. DINNER Freezer Stash Mamas Italian Chicken • Cauliflower Pilaf • Oven Roasted Jalapeños & Onions . . I seriously LOVE my freezer stash!!! The chicken and the cauliflower rice was all compliments of the stash! . . I had a Health Coaching Client Session tonight so I roasted some veggies for a mid week prep top up and I tossed the jalapeños in olive oil and seasoned with @mingleseasoning garlic & herb seasoning and they are DEEEELISH!!! No cheese or bacon required. . . Pilafi is a Cypriot rice dish I grew up on. It’s cooked with onions and chicken stock and we’d serve it with winter dishes like this or eat it with yoghurt and it’s the best!!! . . <> . . So I decided to make a LCHF version and it’s pretty tasty 👌🏻🍃 . . CAULIFLOWER PILAF 1 Cup Cauliflower, riced 1/2 Onion, diced 1/4 Cup Chicken Stock . . Cook onions in olive oil on a medium heat until sweet, soft with a slight brown color. Add cauliflower and stir through. Add stock and up the heat a bit and stir continuously until evaporated. BREAKFAST . . Ellenie’s Raspberry Kisses Noatmeal . 1 cup Unsweetened Coconut Milk 1/2 cup Raspberries 2 tbsp. Hemp hearts 2 tbsp. Almond flour 2 tbsp. Shredded unsweetened coconut 1 tbsp. Flaxseed meal @melrosehealth 1 tbsp. Chia seeds 1 tsp. Pumpkin seeds (garnish) 1 pinch Himalayan salt 1/2 tsp. Pure vanilla essence 1/2 tsp. Cinnamon . . Add all ingredients except for the vanilla essence into a small saucepan over a low heat and cook until thickened, stirring continuously (keep some seeds, coconut and berries back for garnish) Should take about 3 to 5 minutes. . Remove from heat and stir through vanilla essence. Serve warm 👌🏻🍃 . . You can also make this in the microwave. Add all the ingredients except for the vanilla essence and anything you want to use as your garnish to a large microwave safe bowl. Microwave for 1-minute, stir and microwave for an additional 1-minute or until thickened. Depending on your microwave you might need more. I needed a total of 4 with the microwave at work today. Stir through vanilla essence, top with garnishes and enjoy warm! . . . Today is my 5 Month Breastaversary and to mark the occasion I want to share a few things to continue to bring awareness to this very real issue for some implanted women. . . First of all I’ve healed so much in such a short amount of time I’ve even exceeded my own expectations. I still have to continue to be mindful of what I eat and nurture my body but I’M ACTUALLY HEALING!!! . . This is something I couldn’t do despite my best efforts while I had the implants... in fact I just got worse. . . Last month I discussed Gel Bleeds which is what I suffered and means my un-ruptured Implants leaked silicone into my body and the only way to identify this was upon removal because it can’t be imaged through a mammogram or ultrasound. My surgeon and I could only identify it by the air bubbles in my implants and he said the manufactures don’t deny this happens... WTF!! . . This month I’d like to bring attention to the fact that the implant manufacturers are protected by the Trade Secrets Act which mean they do not disclose their ingredients to get approval to sell their product. Once again... WTF!! . . This isn’t like Colonel Sanders and his 11 secret Herbs and Spices! . . This is a device that is inserted into women on top of their vital organs. The manufactures put a 10 to 15 year lifespan on them, although the surgeons don’t always pass on this recommendation. They don’t deny the contents leak into the body without a rupture, but the FDA approves them without knowing what’s really in them. . . Again WTF!! . . As I learn more about this it’s easy for me to understand why I was so sick. For me I believe it was a combination of my body rejecting them - my symptoms started 2-months after they went in & the gel bleeds. . . I don’t believe all women get sick but if you have implants and are unwell please consider that your implants could be your issue too. . . So I’ve switched to Wild Atlantic Salmon in a can because it’s Wild Atlantic Salmon. . . . I always pimp my canned fish by adding things like fresh herbs, spring onions and dress it with a Vinaigrette. And then I add it to my dish. BREAKFAST My Seeded Crackers • Sardines • Cherry Tomatoes • Homemade Mayonnaise • Parsley • Jalapeños • 1/4 Avocado • Balsamic & EVOO Dressing . . . Ellenie’s Seeded Crackers ELLENIE’S SEEDED CRACKERS 1⁄3 cup almond flour 1⁄3 cup sunflower seeds 1⁄3 cup pumpkin seeds 1⁄3 cup flax seed or linseed 1⁄3 cup sesame seeds 1 tablespoon psyllium powder 2 tablespoon Chia Seeds 1 teaspoon salt 1/4 tsp Fennel seeds (optional) 4 tablespoons melted coconut oil 1 cup boiling water . . . Instructions Preheat the oven to 150°C / 300°F. . . Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell . . . TIP: if you’re using solid coconut oil melt it in with the boiling water first . . Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper, pop them on a tray and put them in the oven . . . You can choose the cut them now into shape or crack them after they're cooked for a more rustic look . . . Bake on lower rack for about 30-45 minutes, check every 15-mins as Seeds can heat up really quickly and burn. For an additional 15-mins leave the oven door ajar and the oven on to let them dry out on the low heat . . . Turn off the oven and let them dry in the oven or on a baking wire rack . . . Break into pieces and store in a container in the fridge. I line mine with baking paper . . .
