Sometimes we fall into the trap of doing THE MOST we can to live and eat well and cook heaps of complicated, over the top recipes. What happens then? BURN OUT! We love a bit of gourmet, but there’s nothing like chopping up some great organic ingredients and letting the oven do all the work. Throw your favourite veg into a baking tray with some chickpeas for protein and a combination of spices (we’re loving paprika, cumin, cayenne and pepper at the moment), drizzle with olive oil and sprinkle with a pinch of salt. Let the oven do the work and roast until the veggies start to caramelise, toss in the pan so they cook evenly. When the tray is looking delicious and smelling take it out and serve with flatbread and hummus, over steamed quinoa, or with plenty of fresh greens and a tahini sauce. You know when you go out for Indian and wonder why the curries you cook at home never reach the same depth of flavour? It might be that your pantry is not well stocked enough with the range of spices you’ll find in great Indian cookery! One of our absolute favourites is black mustard seeds, these savoury little seeds pack a flavour punch. Take a simple lentil dhal up a notch by first cooking lentils simply in water. When they’re cooked through add a tadka - a tempering of aromats and spices. A super simple & tasty version of this is to first fry mustard seeds in oil until they start to pop, next add in finely chopped onion and fry until golden. Then add minced garlic and ginger and saute a further minute. Next, add ground coriander, ground cumin and ground turmeric and saute until fragrant. You can at this point add in a chopped tomato and cook down, or add the mix as in into your cooked lentils. Have you got mustard seeds on hand in your pantry? Get dinner on the table quickly for a midweek meal with a super simple cauliflower curry! Simply saute one brown onion, finely diced, then a minced knob of ginger, and a couple of minced garlic cloves. Add 2 heaps teaspoons of our awesome organic curry powder and 1 large tomato, chopped. Saute until the tomato starts to break down. Add 1 can of organic coconut cream, 1 can of water, a few potatoes cut into small cubes, and a small head of cauliflower cut into florets. Cover with a lid and simmer until cauliflower and potato are cooked through. I have to tell you about Sophia’s birthday cake. She had a “healthy” one on her actual birthday. But she didn’t like it. So she begged me for a “not healthy one” for her party. Well, her big sister Lylah has other ideas and set off to make a six tier wholefood cake!! She varied the layers between the organic vanilla gluten free organic cup cake mix we offer at TWC (seriously sooo yum!), and a chocolate cake she made herself with no recipe (very proud mumma cos I can’t freestyle cook to save myself). The party kids all picked the live decorations (flowers). All I had to do was make the icing and sit back and watch the giggling gerties do the rest!! It served as a party activity, and a mumma cake sanity saver in one! I would’ve liked to make a cashew cream icing, or at least just plain whipped cream, but the icing is where I did negotiate and go with regular icing.
