🌿🌱 HEARTY STEW RECIPE 🌱🌿 I've been off ill today and I needed something nice and hearty to pick me up a bit, and this hit the spot! πŸ˜‹ INGREDIENTS 🌟 2 tbsp olive oil 🌟 1 carrot, peeled and diced 🌟 1 onion, diced 🌟 1 clove garlic, crushed 🌟 1 tsp ground cinnamon 🌟 1/2 tsp ground ginger 🌟 1/2 tsp ground turmeric 🌟 500g passata 🌟 1 large sweet potato, diced (no need to peel) 🌟 425g tin kidney beans 🌟 50g quinoa 🌟 1 litre vegetable stock 🌟 100g kale, stems removed, and roughly chopped METHOD 1️⃣ Heat the oil in a pan and fry off the onion and carrots for five minutes or so. Add the garlic and spices and fry for another minute or so. 2️⃣ Move the mixture from the pan to the slow cooker, followed by all other ingredients other than the kale. 🌿🌱 CHANA MASALA RECIPE (curry on the left) 🌱🌿 One of my favourite curries at the moment! Only takes about half an hour so it's well worth the investment of time! INGREDIENTS 🌟4 cloves of garlic 🌟1 chopped onion 🌟1/2-inch piece of ginger root (about 1 cm) 🌟2 x cans chopped tomatoes 2 tbsp tahini 🌟1 tbsp garam masala 🌟1 tbsp turmeric powder 🌟1 tbsp cumin powder 🌟1 tsp sea salt 🌟1/8 tsp cayenne powder 🌟1/8 tsp ground black pepper 🌟2 x 400g cans chickpeas METHOD 1️⃣ Blend the garlic, onion and ginger for a few seconds until you have paste. 2️⃣ Cook the paste in a large pot over a medium to high heat for about 5 minutes, stirring occasionally. 3️⃣ Add the tahini, chopped tomatoes and spices. Cook for another 10 minutes, again stirring occasionally. 4️⃣ Stir the chickpeas into the mixture and cook for another 10 minutes. 🌱🌿BREAKFAST SHAKE🌿🌱 The beauty of a breakfast shake is how quick and easy they are! Mine has 300ml oat milk, 15g peanut butter, 1 banana, 30g oats, 5 ice cubes and 1 scoop of protein shake. 🌱🌿 SOUTH AFRICAN SWEET POTATO STEW RECIPE 🌿🌱 Honestly a huge favourite of mine, and so simple! Bursting with flavour, nutrients and protein! INGREDIENTS 🌟2 tsp Olive Oil 🌟4 garlic cloves, minced 🌟1 red pepper, deseeded and diced 🌟1 tsp red chili flakes 🌟½ tsp ground cinnamon 🌟1 tsp ground ginger 🌟1 tsp brown sugar 🌟1 large sweet potato, cut into cubes 🌟1 can chopped tomatoes 🌟250ml vegetable stock 🌟2 tsp tomato puree 🌟1 tbsp peanut butter 🌟2 cans kidney beans, drained and rinsed 🌟Salt and pepper, to taste METHOD 1️⃣Heat the oil in a large, non-stick pan over a medium heat and fry the garlic and pepper for 7-10 minutes, or until the pepper is tender. 2️⃣Add all of the spices and fry for a minute, stirring continuously. 3️⃣Add the sugar, sweet potato, chopped tomatoes, vegetable stock, tomato puree and peanut butter. Bring to the boil and simmer for 25 minutes, or until the sweet potato becomes tender. 4️⃣Add the kidney beans and stir into the mixture. If it looks a bit dry, add some water (1 tbsp at a time). 5️⃣Season with salt and pepper Enjoy! 🌱🌿 THAI SWEET POTATO AND BEAN CURRY 🌿🌱 As promised! I say this all the time, but honestly this is the easiest dish I have ever made. Let alone probably the most flavoursome! INGREDIENTS 🌟 1 large sweet potato, peeled and chopped 🌟 1 can chickpeas, drained and rinsed 🌟 1 can kidney beans, drained and rinsed 🌟 1 tablespoon lemon grass, finely chopped 🌟 1 can coconut milk 🌟 1 jalapeno, seeding and minced 🌟 2 cloves garlic, minced 🌟 1 cube veggie stock 🌟 Zest of half a lime 🌟 1 cup water 🌟 1/4 teaspoon ground coriander 🌟 1/8 teaspoon cayenne pepper METHOD 1️⃣ Put all ingredients in a slow cooker and cook for 8-9 hours on a low setting, stirring occasionally. That's is. That's literally it. Minimal effort for a phenomenal meal! Give it a go! 🌱🌿 SOYA MINCE, KIDNEY BEAN AND LENTIL CHILI RECIPE 🌿🌱 Workout 5 of 5 done! πŸ’ͺ Post workout meals this week have been a wonderful soya mince chili....I rarely use meat replacements (other than Linda McCartney sausages 😍) so this was a nice change! INGREDIENTS 🌟 1 bag frozen soya mince 🌟 1 tbsp olive oil 🌟 1 onion, chopped 🌟 2 cloves garlic, minced 🌟 1/4 tsp cayenne pepper 🌟 1/2 tsp ground cumin 🌟 1/2 tsp ground cumin 🌟 1/2 tsp smoked paprika 🌟 2 cartons pasatta 🌟 200g dried green lentils 🌟 1 can kidney beans, drained and rinsed METHOD 1️⃣ Heat the oil in the pan and add the onion and garlic. Cook until onion is translucent. 2️⃣ Add soya mince to the pan and cook for 7-8 mins . Then throw in all of the spices, stir so all ingredients are covered in the spices and cook for another minute or so. 3️⃣ Pour both cartons of pasatta in, followed by the lentils. Stir well to make sure lentils are covered in pasatta.
