INGREDIENTS (8 side-dish portions) ▪️vegan pastry base ▪️homemade tomato purée ... ▪️homemade red-capsicum purée ▪️1 small green zucchini, ▪️1 small yellow zucchini ▪️4 small edirne eggplants ▪️4 medium-small tomatoes ▪️Fresh basil, chopped. ❤️❤️❤️❤️❤️ METHOD Preheat the oven to 180 C | 350 f. Finely slice all of the vegetables (Using a mandoline is easiest – although you can slice by hand). Add the vegan pastry to a 24 cm tart tin. Poke holes through the pastry with a fork. Add some beans for weight - to keep the pastry flat - and bake for 10 minutes. Remove from the oven and allow to cool. Add the two purées onto the pastry base. Place the sliced vegetables on top of the mix in a circular layout – alternating the different colours to get a rainbow effect. Cover with baking paper and bake for 25 minutes - then remove the cover and continue to cook for 10 minutes or until the tart is slightly brown on the top. Slice into 8 and serve. Enjoy ☺️ . . Hummus recipe: I can chickpeas, drained 1 clove garlic 1/4 cup tahini 1 cup roasted or steamed beetroot (fork tender) 1 tablespoon lemon juice 1/2 teaspoon sea salt (or to taste) . . I used to add olive oil but I found that the beets give it plenty of liquid and it didn't need more. However, if your hummus needs more liquid, some olive oil wouldn't hurt -- or more beets! . . #veganvideoshare

🎥@gingersandspice . . NON-DAIRY CHEDDAR - it’s easier to make than you think! Here’s the recipe: 🌱 Non-Dairy Cheddar (vegan, gluten-free) . . Ingredients: . 1 cup orange bell pepper, diced 3/4 cup raw cashews (soaked, rinsed & drained) 4 Tbsp nutritional yeast flakes 2 Tbsp raw tahini 2 Tbsp lemon juice, fresh squeezed 1 Tbsp dijon mustard, gluten-free 1 1/2 tsp garlic powder 1 1/2 tsp onion powder 1 1/2 tsp smoked paprika 1 tsp pink himalayan salt 1 1/2 cups purified water 2 Tbsp agar powder . . In food processor, combine bell pepper, cashews, nutritional yeast, tahini, lemon juice, mustard, garlic powder, onion powder, paprika, and salt. Process for approximately 2 minutes until the bell pepper is completely masticated and mixture is smooth. In a saucepan, combine water and agar powder and heat over medium heat for 3 minutes or until it thickens. Pour agar mixture in to food processor for a minute or two. Scraping edges with spatula as needed. Grease a 3 cup container. Pour mixture into greased container, cover and chill for at least 3 hours. When ready to use, invert container and cheese should come out easily. Can be sliced, cut in cubes or shredded. Keep in covered container in the fridge for up to 10 days. #vegancheddar #vegancheese . . #veganvideoshare
