I'm loving roasted vegetables in this cooler weatherβ„πŸŒ± I've been roasting mine in mustard lately πŸ˜‹πŸ˜‹ so good! Today i used a mixture of seeded and french mustards (because there is never too much mustard, right?) And i was right! Because it tastes so darn good πŸ˜‚! Anyways ive got carrots, pumpkin, beets, beans and asparagus. All ontop of some baby spinach and wombok cabbage. I Added some avo and pepita seeds to top it off aswell! I finally created a delicious creamy VANILLA smoothie 😍🌱 And it is super easy! Throw in salad πŸ€πŸŒ± The reason its called the "throw in salad" is because it was created on an empty fridge, with only minimal food to throw in! It is delicious all the same though 😁 🌱 Steam or roast 1 sweet potato. While its cooking add spinach leaves, chopped tomato and diced cucumber to a bowl. When the potato is done, add it to the bowl. Sprinkle with hemp seeds and pinenuts. 🌱 For the dressing whisk together the following ingredients with a fork, in a small bowl. 4 tbsp olive oil 1 heaped tbsp wholegrain mustard 1-2 tsp coconut vinegar or apple cider vinegar 2 tbsp water Salt and pepper to taste. Its a public holiday here today and the kids and i are "bonding" over cooking (im going to call it bonding, but its more me cooking, them eating everything i pull from the cupboard πŸ˜‚) anyway I decided to make something yummy to distract them and came up with these Choc chip cookie dough balls. 🌸 50g Raw almonds 200g Natural peanut butter 30g Vanilla pea protein 1tsp Coconut oil 2tbsp Cacao Nibs 🌸 Blitz almonds in blender for 2 seconds, so they are quite large peices. Set aside in a bowl. Add peanut butter, protein and coconut oil to the blender, mix on low speed untill combined. Add the chopped almonds and cacao nibs and combine on a low speed. Roll into 10 balls - you may have to pop into the freezer for 10 minutes to firm up before rolling, depending on how oily your peanut butter is. Coconut Creme Balls 🌴🌼 β€’ Ive been playing around with Coconut Butter lately, after learning of its awesome benefits. We have been enjoying it in smoothies and straight off of the spoon mostly. But today we made some Creme balls with it, and they are soo yummy. The butter has this crazy creamy texture that is super moorish. Its made completely from coconut flesh, so contains some great properties β€’ Its super high in Lauric Acid, which is antibacterial, so it is an amazing Immune Booster!!! High in healthy fat, which is a great Metabolism booster. It contains good amounts of fibre as well as containing smaller amounts of calcium, magnesium and and iron. β€’ β€’ RECIPE (8 balls) 150g coconut butter 1 tbsp maple syrup 1 tsp vanilla β€’ Blend all ingredients on a very slow speed in food processor untill combined. Scoop mixture into bowl and pop into freezer for 10 minutes to firm up. Veggie bowls are a massive favourite of mine, you can just chuck in whatever you have, and it always turns out delicious! This one is -roasted carrots - cucumber - spinach - avocado - saurkrat - curry mustard chickpeas - lime 😊 β€’ β€’ To flavour the chick peas, i drained and rinsed 1 can of chickpeas, then mixed in a saucepan, with mustard, curry powder, tumeric powder, paprika, garlic powder and dried oregnao, over medium heat for 5-7 minutes.🌱🌻 #veggiebowl #dinnerideas #wholefood #curry #chickpeas #avocado #saurkrat #fav #delicious #mustard
