My Pad Thai always comes out a little different each time I make it. I guess sometimes I’m heavier on a splash of this or that, or maybe it’s just the whatever’s-in-my-fridge veggie combo? But there has yet to be an iteration I didn’t love. This one is made with cashew butter from @onceagainnutbutter and, of course, fish sauce from @redboatfishsauce.

🥣Pasta Fagioli🥣 • • • • • • • • • Happy Saturday, friends!❤️ My husband said this was the best soup I’ve ever made which is crazy because one, he is a soup fanatic, two, I make tons of different kinds and three, he thinks he needs to eat meat with every meal. This is 100% vegetarian because I used an awesome homemade veggie stock instead of chicken stock too. I just loved how the shells slurped up the broth and became little miniature bowls of deliciousness in my mouth. It’s a sprouted overnight oats kinda morning after a full on spin class earlier this AM I ain’t gonna lie I woke up this morning dragging my feet. We had a really nice dinner out last night but something in the food left me feeling puffy and lethargic this morning. The joy of @classpass is that you can’t cancel last minute (without a fee) so I had a cold shower and made my way down to @cyclehouse The class was tough, I didn’t have any time to stretch or warm up so it took me a little bit to get going. It was 20 or so minutes into the class I wasn’t keeping up with the beat, and my body wasn’t responding how I wanted it to, I was counting down the minutes till it was over with and I could leave. It wasn’t until this one particular song that came on where I found my energy lift. The music literally brought me to life. Why? Because it evoked an emotion inside of me, a fond one, a song I used to LOVEc one that had me wanting to jump out of the saddle and spin my legs as fast as they could go, I found my rhythm, and for the rest of the class, it’s safe to say - I crushed it 👊🏼 • Don’t you just love how music can do that? It’s soo powerful yet so personal. My takeaway from that though, is, I had it in me all along, my mind was the only thing slowing me down those first 20 mins. I took inspiration from @marksandspencerfoodpr and made my own banana and date granola 🍌My recipe is 100% basic but it’s great to know exactly what’s going in to your breakfast as apposed to shop bought granolas that are SO high in sugar! 🍯 Recipe completely made up but: 40g gluten free oats 2 teaspoons honey Sprinkling of stevia Spray of coconut oil Mix this together to create clumps then bake in the oven for about 15 mins, stir halfway to make sure all the oats get brown. CHEWY FLAPJACK COOKIES 🌴 It’s the weekend, which naturally means it’s time to bake! These are so simple, with just a few ingredients and taste so dam good. 🤤 Don’t forget to tag @oliviafurner when you get cooking, I love LOVE seeing your recreations. __ Ingredients ▶️ 250g jumbo oats ▶️ 125g diary free butter ▶️ 125g light brown or coconut sugar ▶️ 3 tbsp maple syrup. __ Method ▶️ Preheat the oven to 180 fan ▶️ Cream the butter and sugar together until fluffy ▶️ then add everything else together ▶️ shape into circles ▶️ lay out onto a greased baking tray ▶️ place into the oven for 12-15 minutes.

It's been so hot here my brain feels a little mushy and I basically blame everything that goes wrong on the heat, but also I secretly love it 🔥 hot summer nights and evening swims and smoothies and also POPSICLES. It ain't all bad, I love ya summer. Homemade mango blueberry icy poles; super simple, just blend mango and coconut milk and voila! 🍦

Nothing better for nourishing heart, body and soul than spending a night catching up with wonderful friends and eating delicious chocolates brownie bites! 😍 These delicious bites are a lovely mix between truffle and brownie, taste divine and are so easy to make. Roast 250g of hazelnuts for 10 mins (the roasting brings out the lovely praline flavour.) Once cooled, whizz them up in the blender until you have a rough powder. Add 2-3 tablespoons (depending how chocolatey you want them) of raw cacao or cocoa or powder, a dash of vanilla essence (optional) and a good grind of sea salt. Blend until combined. Then then add 6 medjool dates (approx 150g) - add more if you have a sweeter tooth and blend again until all the dates are combined. Roll into balls and pop in the fridge for 20 minutes. Demolish! I promise you they won’t last long!! These were great for a pudding but are also a great snack to enjoy anytime of day. Hazelnuts are a great source of healthy fats, vitamin B6, folate, phosphorus, potassium and zinc and raw cacao powder contains an antioxidant called resveratrol which helps protect the nervous system and reduces blood pressure. It’s also a great mood enhancer. What’s not love? 💕 . #friends #chocolate #nourish

This month I am eating only vegan food for Veganuary. I am focusing on finding new tastes and new ideas, exploring in the kitchen. 🍝 I hear a lot about cashews and how we can use them in so many different ways, to make cheese, ice cream, power balls etc. Today I am sharing with you a recipe for penne pasta in cashew „cheese” sauce - delicious! 🍝 Add water to cashews so they are fully covered and leave overninght. Blend in blender until smoothe, add half lime, tablespoon olive oil, salt, pepper, mint leaves, basil leaves, fresh pressed garlic. Blend together with all ingredients. 🍝 Cook pasta, I chose lentil penne to make it healthier and include more protein. Fry half onion and garlic on frying pan, add pasta, add the ready cashew sauce, mix togethwr until hot. Add sun dried tomatoes and a big bunch of fresh chopped parsley, top of with feesh ground pepper and smoked salt. Here’s how: - soak cashews in boiling water for approx 1/2 hour - strain + rinse with hot water - add to high speed blender or food processor could work - cook frozen butternut squash (my grocery store has it already peeled + chopped - score!!) - add squash to blender - add seasonings of choice (I used Epicure Basil + Garlic aioli seasoning but would have loved some nutritional yeast. I also used some pink salt) - lil drizzle of some avocado oil - water to help it all blend better Blend everything until it’s silky smooth. Adjust seasonings after a wee taste test. Store in an air tight container for 3 - 4 days in the fridge. • Use as much cashews + squash as you want. More makes more sauce. I don’t measure. 🤷‍♀️ This also tastes great on toast + eggs in lieu of 🥑. • Give it a try. Your belly + taste buds will thank you. • Cheers xo

So delicious, and really easy to throw together, are 2 things I look for in my meals. This meal falls into those categories and this is how I made it➡️ Sauté shrimp over med heat in avocado oil, add salt, garlic powder and I also added asafetida. Once cooked remove and set aside. Scoop previously roasted spaghetti squash out of skin, sauté in same pot with avocado oil. Add same spices and add tomato sauce ( I used @mina shakshuka sauce ) and warm. Add spinach and sauté until wilted. Add the back shrimp and combine until mixed.
