Working on some nut-free granola. Preheat your oven to 225 and place a rack in the upper 1/3 position.
In a large bowl combine 3 cups rolled oats, 1.5 cups wide flake unsweetened coconut, 1 cup raw unsalted sunflower seeds, 1 cup raw unsalted pumpkin seeds, 1 Tablespoon ground cinnamon, .5 teaspoon sea salt, .5 cup good maple syrup, .35 cup olive oil. Stir, folding from bottom of bowl for s good minute or two until everything is well coasted.
Spread onto a parchment-lined baking sheet and set in oven for 2-3 hours.
We like to make this before bed, at about 2.5 hour mark, turn the oven off and leave the door closed, leave the granola in there all night.
Try adding 1 cup almond slices and bump up the evoo to .5 cup. Cardamom works nicely in here too. 🌱
