Barbecue chicken stuffed spaghetti squash🍗🍝 So messy but so delicious! —— Serves 8 Ingredients: -2 spaghetti squash -4 boneless skinless chicken breast -2 celery stalks, chopped -1 bell pepper, chopped -1/2 cup barbecue sauce —— Directions: 1. Preheat oven to 400°F. Grease a baking sheet. Cut the spaghetti squash in half long ways. Place the halves seed-side down on the baking sheet and bake for 15-20 mins until a fork can pierce the skin. 2. Fill a large skillet with 1 cup of water. Place all four chicken breasts into the water. Let the chicken steam until the inside is 165°F. 3. Once the squash is done, scoop out all the seeds and put in the garbage. Using a fork scrap the “spaghetti” out of the skin and place in a bowl along with the chopped celery and pepper. 4. Once the chicken is cooked, shred with two forks and place in the same bowl with the veggies. 5. Add the barbecue sauce and mix until everything is covered. 6. Even divide all the filling between the four skins. Bake for an additional 15 minutes. 7. One of the easiest ways to prepare spaghetti squash is to slice off the ends, and stand it upright on a cutting board. Carefully slice each side down the middle and pull it apart. Brush with fat of choice, season, and roast face down on a baking sheet at 375(f) for one hour. We’ve attached some real-life, unedited photos of this method. It can also cook quickly in an Instant Pot or microwave, saving a little more time! . Seasonal produce has an important place in a primal lifestyle. I'm new to the spaghetti squash game, and the first time I made it I couldn't believe how simple it was to make and how tasty it was. it has lower carbs and is more nutrient dense than traditional pasta, too. 👊🏻squash me. HOW TO: slice the spaghetti squash in half and drizzle avocado oil in the open face bowl, coating all exposed areas (not the skin side). place on a baking sheet and bake for about 40-45 minutes at 375 degrees until the skin is very soft. take a fork and scrape the squash back and forth to gather the "noodles".

#progresspicfriday . Honestly, I haven’t been great about taking my pictures to track my progress. . I am my hardest critic. . I don’t always like the lightening, the angle of the camera, how my hair looks and the list could go on and on. . It’s time to be honest with myself and recognize all the wonderful things my body has done for me. Birthed 2 children, ran 4 marathons, 5 1/2 marathons, squatted 100 pounds and the list could go on and on. . My mantra this week has been I love my body and my body loves me. . I also went back to following the meal plan, using my containers and have cut out dairy and most carbs except sweet potatoes and spaghetti squash. . And the results have been amazing. I’ve been up every morning to either workout from home, run or meet my mastermind group all before 6:30 am. . And my plateau seems to have shifted. . So while I may not have that 6 pack yet, I am able to do moves that I wasn’t able to do 6 months ago. . Been adding cilantro to all of my meals lately and have been loving it, plus it’s so good for healthy digestion😍 •Spaghetti Squash & Wild Rice Stir-Fry• << I cut open the spaghetti squash, put olive oil, sea salt and basil on top and baked it at 375 for 30 minutes, once that was done I took the spaghetti squash out and mixed it with wild rice, tofu, corn, edamame, cauliflower & cherry tomatoes! Whole30 Spaghetti night! # This spaghetti squash dish is one of my absolute favorites. It gives me the feeling of eating full on spaghetti bolognese without all of the repercussions of pasta. # Tonight’s was particularly simple, with just a simple compliant marinara sauce from @costco and some leftover ground turkey from last night— and of course, the fresh basil to top it off. So good!

Say hello to thin spaghetti squash noodles tossed in homemade pesto, sautéed chicken and fresh asparagus. Ingredients • 1 large spaghetti squash (approximately 3 lbs) • ½ cup + 2 T extra virgin olive oil, divided • 1 lb chicken breasts • 2 cups asparagus, cut into halves • 2 cups fresh basil leaves • ½ cup filtered water • 5 large garlic cloves, roughly chopped • ¼ cup walnuts • 1 t salt Instructions 1. Preheat the oven to 400°F. 2. Place the spaghetti squash on a baking sheet and bake for 45 minutes, turning over halfway through. Check for tenderness by using a fork to pierce the skin. 3. While the squash is cooking, heat up 2 tablespoons of olive oil in a large skillet over medium heat. Sauté the chicken breasts for 10 minutes (turning over halfway through). Continue cooking until they turn golden brown, then set the chicken aside and cut into small cubes. 4. Sauté the asparagus in the same skillet for five minutes, or until tender. Remove from pan and set aside. 5. Combine the basil leaves, 1/2 cup olive oil, water, garlic cloves, walnuts, and salt in a blender on high speed. Pulse until you get a homogeneous green pesto. 6. Once the spaghetti squash has been cooked, slice the squash into half lengthwise, then scoop out the seeds. Pull at the flesh with a fork until you get thin, spaghetti-like noodles. 7. Transfer the spaghetti squash noodles to the skillet and mix in the pesto. Add in the cooked chicken with asparagus and mix well until evenly distributed. Continue cooking until heated and then divide between two plates. Serve immediately and enjoy! #spaghettisquash #paleopasta#lowcarblife
