Because I am the most original, on Tuesdays we eat tacos. You can write this off as me being basic, but here’s why taco night works really well in a super simple menu plan. First, you can have a general fall back for a week when you don’t want to plan. For me it’s ground beef, taco seasoning, and whatever we have in the pantry/fridge that works for toppings. I usually will have some combo of shells, tortillas, or lettuce as a base. I always have all of this and can do a quick defrost in the morning. Second, if I want to get fancy and try something new, I can go all out and plan for fish tacos. Yes, right now I am at a place in life where fish tacos are considered both ‘fancy’ and ‘going all out’. Third, this is a way I can use up a bunch of stuff that’s in the freezer. I have lots of roasts and the like from our meat share in the freezer and honestly does anyone actually like pot roast? Not me. Instead I throw it in the Instant Pot with some salsa and call it taco meat. And last, if we’re going to eat some form of taco every week, why wouldn’t we do it on Tuesday? If I’m basic enough for weekly tacos, you know I’m all over alliteration.
